🍽️ Creamy Red Lentil Dal with Rice

Ingredients
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- oil 2 tbsp
- lentils, red 300 g
- curry powder 1 tsp
- vegetable broth 700 ml
- tomatoes, pureed 400 g
- long-grain rice 300 g
- salt pinch
- cilantro, fresh 10 g
- lemons 1 pc.
- chili, ground pinch
- soy yogurt 4 tbsp
Instructions
- 1. Cut the onion in half and peel off the outer skin. Dice the onion into very small cubes.
- 2. Peel the garlic clove and chop it finely.
- 3. Heat two tablespoons of oil in a pot over medium heat.
- 4. Add the diced onions and chopped garlic to the pot.
- 5. Sauté the vegetables for about two minutes until they lose their color.
- 6. Add the red lentils and the curry powder.
- 7. Continue to fry the mixture for about one minute.
- 8. Deglaze the mixture with vegetable broth and puréed tomatoes.
- 9. Let the dal simmer for about twenty minutes until the lentils are soft.
- 10. Put the rice into a separate pot.
- 11. Pour about 700 milliliters of salted water over the rice.
- 12. Bring the water to a boil.
- 13. Cook the rice for about twelve minutes until it is soft.
- 14. Wash the fresh coriander plant under running water.
- 15. Shake the coriander dry.
- 16. Chop the coriander finely.
- 17. Cut the lemon in half.
- 18. Squeeze the juice from the lemon halves.
- 19. Season the red lentil dal with salt and chili flakes.
- 20. Add the fresh lemon juice to the dal.
- 21. Plate the rice and the lentil dal.
- 22. Add a dollop of soy yogurt.
- 23. Sprinkle the dish with the chopped coriander.
