🍰 Red Fruit Tart

Ingredients
- Eggs 4 pcs.
- Sugar 180 g
- Salt pinch
- Wheat flour, Type 405 80 g
- Cornstarch 90 g
- Baking powder 1 tsp
- Red currants, fresh 150 g
- Cherries, fresh 150 g
- Strawberries 150 g
- Apples, red 1 pc.
- Peaches 1 pc.
- Raspberries, fresh 150 g
- Milk 500 ml
- Vanilla pudding powder 32 g
- Mascarpone 100 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Separate the eggs. Beat the egg whites in a bowl with an electric mixer until stiff.
- 3. Continue stirring the egg whites and slowly pour in 50 grams of sugar.
- 4. Mix the egg yolks with 100 grams of sugar and a pinch of salt in a separate bowl.
- 5. Sift the flour, 80 grams of starch, and baking powder over the egg yolk mixture.
- 6. Gently fold in half of the egg whites.
- 7. Gently fold in the remaining egg whites.
- 8. Pour the batter into a greased springform pan.
- 9. Bake the dough in the oven for about 15 minutes until golden yellow.
- 10. Let the dough cool down.
- 11. Turn the cake out of the pan.
- 12. Wash the fruits and let them drain.
- 13. Pick the redcurrants off the stems.
- 14. Halve the cherries and remove the pits.
- 15. Remove the stems from the strawberries.
- 16. Cut the strawberries into quarters.
- 17. Peel the apple and cut it into quarters.
- 18. Remove the core from the apple.
- 19. Dice the apple.
- 20. Halve the peach and remove the pit.
- 21. Dice the peach.
- 22. Heat a pot over medium heat.
- 23. Add the apple, peach, cherries, and 3 tablespoons of sugar to the pot.
- 24. Cook everything for 3 minutes.
- 25. Add the redcurrants.
- 26. Continue cooking everything for about 1 minute.
- 27. Mix 1 tablespoon of starch with 3 tablespoons of cold water in a bowl.
- 28. Pour the mixed starch into the pot.
- 29. Bring the mixture to a boil while stirring for about 1 minute.
- 30. Continue cooking until a slightly thick fruit mixture forms.
- 31. Remove the pot from the heat.
- 32. Stir in the raspberries and strawberries.
- 33. Let the fruit mixture cool down.
- 34. Mix 6 tablespoons of milk with sugar and vanilla pudding powder in a bowl.
- 35. Boil the remaining milk in a pot.
- 36. Stir the prepared pudding powder into the boiling milk.
- 37. Cook the pudding while stirring constantly for about 1 minute.
- 38. Reduce the heat.
- 39. Simmer the pudding for about 4 minutes until it thickens.
- 40. Remove the pot from the heat.
- 41. Fold in the mascarpone.
- 42. Let the mixture cool for about 3 minutes.
- 43. Spread the vanilla cream evenly over the cake base.
- 44. Let the cream cool for about 5 minutes.
- 45. Place the red fruit mixture onto the vanilla cream starting from the center.
- 46. Serve the red fruit tart.
