  1. 1. Preheat the oven to 200 degrees Celsius with fan.
  2. 2. Separate the eggs. Beat the egg whites in a bowl with an electric mixer until stiff.
  3. 3. Continue stirring the egg whites and slowly pour in 50 grams of sugar.
  4. 4. Mix the egg yolks with 100 grams of sugar and a pinch of salt in a separate bowl.
  5. 5. Sift the flour, 80 grams of starch, and baking powder over the egg yolk mixture.
  6. 6. Gently fold in half of the egg whites.
  7. 7. Gently fold in the remaining egg whites.
  8. 8. Pour the batter into a greased springform pan.
  9. 9. Bake the dough in the oven for about 15 minutes until golden yellow.
  10. 10. Let the dough cool down.
  11. 11. Turn the cake out of the pan.
  12. 12. Wash the fruits and let them drain.
  13. 13. Pick the redcurrants off the stems.
  14. 14. Halve the cherries and remove the pits.
  15. 15. Remove the stems from the strawberries.
  16. 16. Cut the strawberries into quarters.
  17. 17. Peel the apple and cut it into quarters.
  18. 18. Remove the core from the apple.
  19. 19. Dice the apple.
  20. 20. Halve the peach and remove the pit.
  21. 21. Dice the peach.
  22. 22. Heat a pot over medium heat.
  23. 23. Add the apple, peach, cherries, and 3 tablespoons of sugar to the pot.
  24. 24. Cook everything for 3 minutes.
  25. 25. Add the redcurrants.
  26. 26. Continue cooking everything for about 1 minute.
  27. 27. Mix 1 tablespoon of starch with 3 tablespoons of cold water in a bowl.
  28. 28. Pour the mixed starch into the pot.
  29. 29. Bring the mixture to a boil while stirring for about 1 minute.
  30. 30. Continue cooking until a slightly thick fruit mixture forms.
  31. 31. Remove the pot from the heat.
  32. 32. Stir in the raspberries and strawberries.
  33. 33. Let the fruit mixture cool down.
  34. 34. Mix 6 tablespoons of milk with sugar and vanilla pudding powder in a bowl.
  35. 35. Boil the remaining milk in a pot.
  36. 36. Stir the prepared pudding powder into the boiling milk.
  37. 37. Cook the pudding while stirring constantly for about 1 minute.
  38. 38. Reduce the heat.
  39. 39. Simmer the pudding for about 4 minutes until it thickens.
  40. 40. Remove the pot from the heat.
  41. 41. Fold in the mascarpone.
  42. 42. Let the mixture cool for about 3 minutes.
  43. 43. Spread the vanilla cream evenly over the cake base.
  44. 44. Let the cream cool for about 5 minutes.
  45. 45. Place the red fruit mixture onto the vanilla cream starting from the center.
  46. 46. Serve the red fruit tart.
