🍰 Red Fruit Pudding with Vanilla Sauce

Ingredients
- sour cherries in a jar 200 g
- strawberries 200 g
- blueberries, fresh 200 g
- raspberries, fresh 200 g
- sugar 80 g
- red wine, dry 300 ml
- apple juice 125 ml
- cinnamon pinch
- vanilla sugar 60 g
- cornstarch 1 tbsp
- white rum 50 ml
- whipping cream 200 g
- milk 250 ml
- vanilla pudding powder 10 g
Instructions
- 1. Drain the cherries in a sieve.
- 2. Wash the berries thoroughly under running water.
- 3. Remove the green stems from the strawberries.
- 4. Cut the strawberries into quarters.
- 5. Put half of the sugar into a pot.
- 6. Caramelize the sugar on high heat for about 3 minutes.
- 7. Deglaze the caramel with 250 ml of red wine.
- 8. Add the apple juice to the pot.
- 9. Add the cinnamon.
- 10. Add half of the vanilla sugar.
- 11. Bring the mixture to a boil.
- 12. Stir the prepared berries into the liquid.
- 13. Cover the pot with a lid.
- 14. Simmer the pudding on low heat for about 4 minutes.
- 15. Mix the remaining red wine with the cornstarch in a small bowl.
- 16. Stir the wine-starch mixture into the boiling red fruit pudding.
- 17. Let the pudding simmer for another 3 minutes.
- 18. Remove the pot from the heat.
- 19. Stir the rum into the pudding.
- 20. Let the red fruit pudding cool down.
- 21. Put the cream, 200 ml of milk, and the remaining vanilla sugar into a pot.
- 22. Bring the milk-cream mixture to a boil.
- 23. Put the remaining milk into a separate bowl.
- 24. Mix the cold milk with the vanilla pudding powder.
- 25. Add the pudding-milk mixture to the boiling cream-milk.
- 26. Thicken the vanilla sauce while stirring.
- 27. Distribute the red fruit pudding onto bowls.
- 28. Add the vanilla sauce.
- 29. Serve the dessert.
