🍽️ Crispy Sausages with Creamy Kohlrabi-Potato Mash and Caramelized Onions

Ingredients
- potatoes, floury 800 g
- kohlrabi 2 pcs.
- salt pinch
- onions, yellow 3 pcs.
- butter 4 tbsp
- sugar pinch
- sweet mustard 1 tbsp
- crème fraîche 2 tbsp
- grilled sausages 8 pcs.
- chives, fresh 10 g
Instructions
- 1. Peel the potatoes and the kohlrabi.
- 2. Cut the vegetables into coarse cubes.
- 3. Place the vegetables in a pot.
- 4. Cover them with salted water.
- 5. Cover the pot.
- 6. Bring the water to a boil.
- 7. Reduce the heat to medium.
- 8. Cook the vegetables until tender for about 25 minutes.
- 9. Peel the onions in the meantime.
- 10. Slice the onions into thin rings.
- 11. Heat 2 tablespoons of butter in a pan over low heat.
- 12. Add the onion rings to the pan.
- 13. Add a pinch of sugar.
- 14. Cover the pan.
- 15. Let the onions melt for 15 to 20 minutes.
- 16. Stir the onions regularly.
- 17. Season the onions with sweet mustard and salt.
- 18. Drain the cooked vegetables in a colander.
- 19. Squeeze out the moisture using a ladle.
- 20. Return the vegetables to the pot.
- 21. Let the vegetables steam dry in the pot for a moment.
- 22. Add crème fraîche and 2 tablespoons of butter.
- 23. Mash the mixture into a puree using a potato masher.
- 24. Season the puree with salt.
- 25. Pierce the sausages several times with a toothpick.
- 26. Heat 2 tablespoons of oil in a pan over medium-high heat.
- 27. Fry the sausages until golden brown on all sides for 5 to 8 minutes.
- 28. Wash the chives.
- 29. Shake the chives dry.
- 30. Slice the chives into thin rings.
- 31. Place the mash on the plates.
- 32. Place the sausages on top.
- 33. Add the melted onions.
- 34. Sprinkle the dish with chives.
- 35. Serve the food.
