  1. 1. Peel the potatoes and cut them into large cubes.
  2. 2. Place the potato cubes in a pot and cover them just slightly with salted water.
  3. 3. Bring the water to a boil and cook the potatoes for about 15 minutes over medium heat.
  4. 4. Peel the onions and slice them into thin rings.
  5. 5. Rinse the parsley and dry it thoroughly.
  6. 6. Remove the parsley leaves from the stems and chop them finely.
  7. 7. Let the sausages come to room temperature.
  8. 8. Prick the sausages all over with a toothpick.
  9. 9. Wash the grapes and quarter them lengthwise.
  10. 10. Melt 2 tablespoons of butter in a pan over low heat.
  11. 11. Add the onion rings and a pinch of sugar to the pan.
  12. 12. Cook the onions covered for about 15 to 20 minutes until soft, stirring occasionally.
  13. 13. Season the onions with salt and a little sugar.
  14. 14. Mix mustard, 1 teaspoon of vinegar, and 1 tablespoon of oil thoroughly in a bowl.
  15. 15. Season the dressing with salt, pepper, and sugar.
  16. 16. Add the grapes and half of the chopped parsley to the dressing.
  17. 17. Drain the cooked potatoes and return them to the pot.
  18. 18. Mash the potatoes with cream and 2 tablespoons of butter until smooth.
  19. 19. Stir the remaining parsley into the mashed potatoes.
  20. 20. Season the mashed potatoes with salt and pepper.
  21. 21. Heat 2 tablespoons of oil in a pan or grill pan over medium to high heat.
  22. 22. Fry the sausages for about 7 to 10 minutes until golden brown.
  23. 23. Serve the sausages, mashed potatoes, onions, and grape salsa on plates.
  24. 24. Serve the sausages with mustard on the side.
