🍽️ Crispy Sausages with Creamy Mashed Potatoes, Caramelized Onions, and Fresh Grape Dip

Ingredients
- Potatoes, mainly waxy 1 g
- Salt Pinch
- Onions, yellow 4 pcs.
- Parsley, fresh 20 g
- Fried Sausages 8 pcs.
- Grapes, light 200 g
- Butter 4 tbsp
- Sugar Pinch
- Mustard 1 tbsp
- Vinegar 1 tbsp
- Oil 3 tbsp
- Whipping Cream 100 g
Instructions
- 1. Peel the potatoes and cut them into large cubes.
- 2. Place the potato cubes in a pot and cover them just slightly with salted water.
- 3. Bring the water to a boil and cook the potatoes for about 15 minutes over medium heat.
- 4. Peel the onions and slice them into thin rings.
- 5. Rinse the parsley and dry it thoroughly.
- 6. Remove the parsley leaves from the stems and chop them finely.
- 7. Let the sausages come to room temperature.
- 8. Prick the sausages all over with a toothpick.
- 9. Wash the grapes and quarter them lengthwise.
- 10. Melt 2 tablespoons of butter in a pan over low heat.
- 11. Add the onion rings and a pinch of sugar to the pan.
- 12. Cook the onions covered for about 15 to 20 minutes until soft, stirring occasionally.
- 13. Season the onions with salt and a little sugar.
- 14. Mix mustard, 1 teaspoon of vinegar, and 1 tablespoon of oil thoroughly in a bowl.
- 15. Season the dressing with salt, pepper, and sugar.
- 16. Add the grapes and half of the chopped parsley to the dressing.
- 17. Drain the cooked potatoes and return them to the pot.
- 18. Mash the potatoes with cream and 2 tablespoons of butter until smooth.
- 19. Stir the remaining parsley into the mashed potatoes.
- 20. Season the mashed potatoes with salt and pepper.
- 21. Heat 2 tablespoons of oil in a pan or grill pan over medium to high heat.
- 22. Fry the sausages for about 7 to 10 minutes until golden brown.
- 23. Serve the sausages, mashed potatoes, onions, and grape salsa on plates.
- 24. Serve the sausages with mustard on the side.
