  1. 1. Rinse lentils thoroughly in a sieve and bring to a boil in a pot with about 400 ml water. Cover and cook over medium heat for about 25 minutes until al dente.
  2. 2. Peel carrots, trim ends and cut into small cubes. Wash spring onions, drain, remove roots and cut into thin rings.
  3. 3. Heat 1 tbsp oil in a pan over medium heat. Sauté carrots and spring onions for about 4 minutes. Season with salt and pepper and set aside in a bowl.
  4. 4. Heat 1 tbsp oil in the same pan over medium heat, add potato noodles and fry for about 6 minutes until golden brown. Then set aside on a plate.
  5. 5. Heat the pan again, this time with 1 tbsp oil on high heat. Fry the grilled sausages for about 5 minutes. Add the potato noodles, lightly salt and toss for approx. 1 minute.
  6. 6. Drain lentils and add to the vegetables in the bowl. Add 1 tbsp oil, balsamic vinegar and 3 tbsp water and season well with salt and pepper.
  7. 7. Serve the lukewarm lentil salad together with the potato noodles and sausages on plates and sprinkle with roasted onions. Enjoy your meal!
