  1. 1. Halve the shallots and peel them. Cut them into fine cubes.
  2. 2. Wash the carrots, peel them, and cut off the ends. Dice them finely.
  3. 3. Wash the peppers thoroughly. Cut them in half, remove the stem and seeds. Cut the flesh into coarse pieces.
  4. 4. Wash the Pak Choi and dry it well. Cut off the root base. Cut the vegetable into pieces about 2 cm in size.
  5. 5. Wash the parsley and shake it dry. Finely chop the leaves.
  6. 6. Grate the Parmesan finely using a grater.
  7. 7. Heat 1 tbsp of oil in a pot over medium heat.
  8. 8. Sauté the shallot cubes in it for about 2 minutes until translucent.
  9. 9. Add the carrot cubes and continue to sauté for approx. 3 minutes.
  10. 10. Stir in the kritharaki (small pasta).
  11. 11. Deglaze the mixture with broth.
  12. 12. Let the pasta cook covered for about 15 minutes.
  13. 13. Heat 2 tbsp of oil in a frying pan over high heat.
  14. 14. Fry the grilled sausages all around for about 5 to 10 minutes.
  15. 15. Place the sausages on a plate.
  16. 16. Cover them with aluminum foil to keep them warm.
  17. 17. Add 1 tbsp of oil to the pan drippings.
  18. 18. Heat the oil over medium heat.
  19. 19. Add the pepper cubes.
  20. 20. Sprinkle them with 1 tsp of sugar.
  21. 21. Fry the vegetables for about 3 minutes.
  22. 22. Add the Pak Choi pieces.
  23. 23. Fry everything for a further 3 minutes.
  24. 24. Season the vegetables with salt and pepper.
  25. 25. Fold the vegetables into the finished kritharaki.
  26. 26. Add the Parmesan.
  27. 27. Finally season the pasta vegetable mixture with salt and pepper.
  28. 28. Plate the vegetable kritharaki.
  29. 29. Place the grilled sausages alongside.
  30. 30. Sprinkle the dish with the chopped parsley.
  31. 31. Serve the food immediately.
