🍽️ Grilled Sausages with Mediterranean Kritharaki Vegetables

Ingredients
- Shallots 2 pcs
- Carrots 2 pcs
- Pepper, yellow 1 pc
- Bell pepper 1 pc
- Pak Choi 400 g
- Parsley, fresh 10 g
- Parmesan 20 g
- Oil 4 tbsp
- Kritharaki pasta 300 g
- Vegetable broth 500 ml
- Mini roast bratwursts 8 pcs
- Sugar 1 tsp
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Halve the shallots and peel them. Cut them into fine cubes.
- 2. Wash the carrots, peel them, and cut off the ends. Dice them finely.
- 3. Wash the peppers thoroughly. Cut them in half, remove the stem and seeds. Cut the flesh into coarse pieces.
- 4. Wash the Pak Choi and dry it well. Cut off the root base. Cut the vegetable into pieces about 2 cm in size.
- 5. Wash the parsley and shake it dry. Finely chop the leaves.
- 6. Grate the Parmesan finely using a grater.
- 7. Heat 1 tbsp of oil in a pot over medium heat.
- 8. Sauté the shallot cubes in it for about 2 minutes until translucent.
- 9. Add the carrot cubes and continue to sauté for approx. 3 minutes.
- 10. Stir in the kritharaki (small pasta).
- 11. Deglaze the mixture with broth.
- 12. Let the pasta cook covered for about 15 minutes.
- 13. Heat 2 tbsp of oil in a frying pan over high heat.
- 14. Fry the grilled sausages all around for about 5 to 10 minutes.
- 15. Place the sausages on a plate.
- 16. Cover them with aluminum foil to keep them warm.
- 17. Add 1 tbsp of oil to the pan drippings.
- 18. Heat the oil over medium heat.
- 19. Add the pepper cubes.
- 20. Sprinkle them with 1 tsp of sugar.
- 21. Fry the vegetables for about 3 minutes.
- 22. Add the Pak Choi pieces.
- 23. Fry everything for a further 3 minutes.
- 24. Season the vegetables with salt and pepper.
- 25. Fold the vegetables into the finished kritharaki.
- 26. Add the Parmesan.
- 27. Finally season the pasta vegetable mixture with salt and pepper.
- 28. Plate the vegetable kritharaki.
- 29. Place the grilled sausages alongside.
- 30. Sprinkle the dish with the chopped parsley.
- 31. Serve the food immediately.
