🍽️ Crispy Rosemary Chicken with Parmesan Fries, Mushrooms and Herb Oil

Ingredients
- rosemary, fresh 10 g
- garlic cloves 1 pc.
- olive oil 5 tbsp
- pepper, black ground pinch
- chicken breast fillets 600 g
- potatoes, mostly waxy 1 kg
- parsley, fresh 30 g
- salt pinch
- oil 3 tbsp
- mushrooms, white 350 g
- shallots 1 pc.
- butter 1 tbsp
- parmesan, grated 40 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan.
- 2. Wash the rosemary thoroughly and pat it dry.
- 3. Strip the rosemary needles from the stems and chop them finely.
- 4. Peel the garlic and chop it finely as well.
- 5. Take half of the chopped garlic and half of the rosemary.
- 6. Mix these ingredients in a bowl with one tablespoon of olive oil and pepper.
- 7. Rinse the chicken breast fillets and pat them dry with a kitchen towel.
- 8. Cut incisions about 1 centimeter wide across the meat.
- 9. Be careful not to cut all the way through the fillet.
- 10. Massage the marinade into the meat.
- 11. Set the meat aside to let the flavors absorb.
- 12. Wash the potatoes thoroughly.
- 13. Cut the potatoes into sticks of fry size.
- 14. Line a baking tray with baking paper.
- 15. Place the fries on the tray.
- 16. Toss the fries with one tablespoon of olive oil.
- 17. Spread the fries evenly on the tray.
- 18. Bake the fries in the oven for 20 to 25 minutes until golden brown.
- 19. Turn the fries once after 10 minutes.
- 20. Wash the parsley and shake it dry.
- 21. Strip the parsley leaves from the stems.
- 22. Chop the parsley leaves coarsely.
- 23. Take the remaining chopped garlic.
- 24. Put the parsley, the remaining garlic, and 3 tablespoons of olive oil into a tall container.
- 25. Blend the mixture into an oil.
- 26. Season the oil with salt and pepper.
- 27. Set the herb oil aside.
- 28. Heat 1 tablespoon of oil in a pan over medium to high heat.
- 29. Fry the rosemary chicken on all sides for about 3 minutes until golden brown.
- 30. Place the chicken fillets on the tray with the fries.
- 31. Finish cooking the chicken in the oven for 8 to 10 minutes.
- 32. Leave the pan uncleaned for the next steps.
- 33. Clean the mushrooms with a kitchen towel if necessary.
- 34. Remove the stems of the mushrooms.
- 35. Quarter the mushrooms.
- 36. Halve the shallot and peel it.
- 37. Dice the shallot finely.
- 38. Heat 2 tablespoons of oil in the same pan over high heat.
- 39. Fry the mushrooms for about 4 minutes, shaking the pan occasionally.
- 40. Fry the mushrooms until they are golden brown.
- 41. Add the diced shallot, the remaining rosemary, and the butter to the pan.
- 42. Finish frying the mixture over medium heat for about 3 minutes.
- 43. Season the mushrooms with salt and pepper.
- 44. Take the baking tray out of the oven.
- 45. Put the fries into a bowl.
- 46. Shake the bowl constantly.
- 47. Add Parmesan and salt gradually.
- 48. Plate the chicken together with the fries and mushrooms.
- 49. Drizzle the dish with the herb-garlic oil.
- 50. Add some pan juices.
