  1. 1. Preheat the oven to 220 degrees Celsius with fan.
  2. 2. Wash the rosemary thoroughly and pat it dry.
  3. 3. Strip the rosemary needles from the stems and chop them finely.
  4. 4. Peel the garlic and chop it finely as well.
  5. 5. Take half of the chopped garlic and half of the rosemary.
  6. 6. Mix these ingredients in a bowl with one tablespoon of olive oil and pepper.
  7. 7. Rinse the chicken breast fillets and pat them dry with a kitchen towel.
  8. 8. Cut incisions about 1 centimeter wide across the meat.
  9. 9. Be careful not to cut all the way through the fillet.
  10. 10. Massage the marinade into the meat.
  11. 11. Set the meat aside to let the flavors absorb.
  12. 12. Wash the potatoes thoroughly.
  13. 13. Cut the potatoes into sticks of fry size.
  14. 14. Line a baking tray with baking paper.
  15. 15. Place the fries on the tray.
  16. 16. Toss the fries with one tablespoon of olive oil.
  17. 17. Spread the fries evenly on the tray.
  18. 18. Bake the fries in the oven for 20 to 25 minutes until golden brown.
  19. 19. Turn the fries once after 10 minutes.
  20. 20. Wash the parsley and shake it dry.
  21. 21. Strip the parsley leaves from the stems.
  22. 22. Chop the parsley leaves coarsely.
  23. 23. Take the remaining chopped garlic.
  24. 24. Put the parsley, the remaining garlic, and 3 tablespoons of olive oil into a tall container.
  25. 25. Blend the mixture into an oil.
  26. 26. Season the oil with salt and pepper.
  27. 27. Set the herb oil aside.
  28. 28. Heat 1 tablespoon of oil in a pan over medium to high heat.
  29. 29. Fry the rosemary chicken on all sides for about 3 minutes until golden brown.
  30. 30. Place the chicken fillets on the tray with the fries.
  31. 31. Finish cooking the chicken in the oven for 8 to 10 minutes.
  32. 32. Leave the pan uncleaned for the next steps.
  33. 33. Clean the mushrooms with a kitchen towel if necessary.
  34. 34. Remove the stems of the mushrooms.
  35. 35. Quarter the mushrooms.
  36. 36. Halve the shallot and peel it.
  37. 37. Dice the shallot finely.
  38. 38. Heat 2 tablespoons of oil in the same pan over high heat.
  39. 39. Fry the mushrooms for about 4 minutes, shaking the pan occasionally.
  40. 40. Fry the mushrooms until they are golden brown.
  41. 41. Add the diced shallot, the remaining rosemary, and the butter to the pan.
  42. 42. Finish frying the mixture over medium heat for about 3 minutes.
  43. 43. Season the mushrooms with salt and pepper.
  44. 44. Take the baking tray out of the oven.
  45. 45. Put the fries into a bowl.
  46. 46. Shake the bowl constantly.
  47. 47. Add Parmesan and salt gradually.
  48. 48. Plate the chicken together with the fries and mushrooms.
  49. 49. Drizzle the dish with the herb-garlic oil.
  50. 50. Add some pan juices.
