  1. 1. Remove the leaves from the head of the lettuce core.
  2. 2. Wash the lettuce leaves in a sieve and let them drain well.
  3. 3. Halve the shallots, peel them, and dice them finely.
  4. 4. Peel the garlic and chop it finely.
  5. 5. Wash the radicchio and remove the hard core.
  6. 6. Wash the arugula in a sieve and let it drain.
  7. 7. Halve the lemon and squeeze out the juice.
  8. 8. Place the shallots, garlic, radicchio, arugula, 2 tablespoons of lemon juice, and the head lettuce into a pot or a large bowl.
  9. 9. Blend the ingredients finely using a hand blender.
  10. 10. Add the vegetable broth and blend everything finely again.
  11. 11. Stir the coconut milk into the soup.
  12. 12. Season the soup with salt, pepper, grated nutmeg, agave syrup, and more lemon juice to taste.
  13. 13. Serve the cold soup in soup bowls or glasses.
