🍲 Fresh Head Lettuce Coconut Soup

Ingredients
- head lettuce 1 pc.
- shallots 2 pcs.
- garlic cloves 1 pc.
- radicchio 1 pc.
- arugula 30 g
- lemons 1 pc.
- vegetable broth 500 ml
- coconut milk 250 ml
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
- agave syrup 2 tbsp
Instructions
- 1. Remove the leaves from the head of the lettuce core.
- 2. Wash the lettuce leaves in a sieve and let them drain well.
- 3. Halve the shallots, peel them, and dice them finely.
- 4. Peel the garlic and chop it finely.
- 5. Wash the radicchio and remove the hard core.
- 6. Wash the arugula in a sieve and let it drain.
- 7. Halve the lemon and squeeze out the juice.
- 8. Place the shallots, garlic, radicchio, arugula, 2 tablespoons of lemon juice, and the head lettuce into a pot or a large bowl.
- 9. Blend the ingredients finely using a hand blender.
- 10. Add the vegetable broth and blend everything finely again.
- 11. Stir the coconut milk into the soup.
- 12. Season the soup with salt, pepper, grated nutmeg, agave syrup, and more lemon juice to taste.
- 13. Serve the cold soup in soup bowls or glasses.
