🍳 Crispy Rösti Waffles with Apple-Mango Compote

Ingredients
- potatoes, starchy 800 g
- salt pinch
- cornstarch 4 tbsp
- oil 4 tbsp
- apples, red 2 pcs
- mango 1 pcs
- brown sugar pinch
- mint, fresh 10 g
Instructions
- 1. Peel the potatoes.
- 2. Grate the peeled potatoes finely.
- 3. Place the grated potatoes in a bowl.
- 4. Salt the potatoes.
- 5. Knead the potatoes vigorously by hand.
- 6. Squeeze the potato mixture firmly with your hands.
- 7. Pour off the released liquid.
- 8. Add cornstarch to the potato mixture.
- 9. Mix everything thoroughly.
- 10. Preheat the waffle iron.
- 11. Grease the waffle iron.
- 12. Spread 2 to 3 tablespoons of the potato mixture onto the waffle iron.
- 13. Bake the waffle for about 6 minutes until golden brown.
- 14. Grease the waffle iron again between batches.
- 15. Repeat the baking process with the remaining potato mixture.
- 16. Wash the apples.
- 17. Remove the core from the apples.
- 18. Cut the apples into cubes.
- 19. Peel the mango.
- 20. Separate the mango flesh from the pit.
- 21. Cut the mango flesh into cubes.
- 22. Place the apple cubes and 50 milliliters of water in a pot.
- 23. Heat the apple-water mixture over medium heat.
- 24. Simmer the apples covered for about 8 minutes.
- 25. Add the mango cubes to the apples.
- 26. Season the compote with raw cane sugar.
- 27. Remove the pot from the heat.
- 28. Wash the mint.
- 29. Shake the mint dry.
- 30. Pluck the mint leaves from the stems.
- 31. Distribute the rösti waffles onto plates.
- 32. Place the apple-mango compote on the waffles.
- 33. Garnish the dish with the mint leaves.
- 34. Serve the waffles immediately.
