  1. 1. Preheat the oven to 50 degrees Celsius using top and bottom heat.
  2. 2. Peel the potatoes and wash them thoroughly.
  3. 3. Grate the potatoes coarsely.
  4. 4. Place the grated potatoes into a sieve.
  5. 5. Rinse the potatoes under running water until the water runs clear.
  6. 6. Squeeze the potatoes firmly to remove excess moisture.
  7. 7. Season the potato mixture with salt and pepper.
  8. 8. Heat two tablespoons of oil in a pan over medium heat.
  9. 9. Place one spoonful of the potato mixture into the hot pan.
  10. 10. Press the mixture down slightly with the back of the spoon.
  11. 11. Fry the rösti for about two to three minutes until golden brown on the first side.
  12. 12. Flip the rösti and fry for another two to three minutes on the other side.
  13. 13. Remove the finished rösti from the pan.
  14. 14. Place the rösti on kitchen paper to absorb excess oil.
  15. 15. Keep the rösti warm in the preheated oven at 50 degrees.
  16. 16. Repeat steps 8 to 15 with the remaining potato mixture.
  17. 17. Heat two more tablespoons of oil in a clean pan over high heat.
  18. 18. Crack the eggs directly into the hot pan.
  19. 19. Fry the eggs for about four minutes until the whites are set.
  20. 20. Season the fried eggs with salt and pepper.
  21. 21. Wash the chives thoroughly.
  22. 22. Dry the chives well.
  23. 23. Cut the chives into fine rings.
  24. 24. Take the warm rösti out of the oven.
  25. 25. Serve the rösti with the fried eggs and fresh chives.
