🍳 Crispy Potato Rösti with Fried Eggs

Ingredients
- potatoes, waxy 800 g
- salt pinch
- pepper, black ground pinch
- olive oil 6 tbsp
- eggs 4 pcs
- chives, fresh 10 g
Instructions
- 1. Preheat the oven to 50 degrees Celsius using top and bottom heat.
- 2. Peel the potatoes and wash them thoroughly.
- 3. Grate the potatoes coarsely.
- 4. Place the grated potatoes into a sieve.
- 5. Rinse the potatoes under running water until the water runs clear.
- 6. Squeeze the potatoes firmly to remove excess moisture.
- 7. Season the potato mixture with salt and pepper.
- 8. Heat two tablespoons of oil in a pan over medium heat.
- 9. Place one spoonful of the potato mixture into the hot pan.
- 10. Press the mixture down slightly with the back of the spoon.
- 11. Fry the rösti for about two to three minutes until golden brown on the first side.
- 12. Flip the rösti and fry for another two to three minutes on the other side.
- 13. Remove the finished rösti from the pan.
- 14. Place the rösti on kitchen paper to absorb excess oil.
- 15. Keep the rösti warm in the preheated oven at 50 degrees.
- 16. Repeat steps 8 to 15 with the remaining potato mixture.
- 17. Heat two more tablespoons of oil in a clean pan over high heat.
- 18. Crack the eggs directly into the hot pan.
- 19. Fry the eggs for about four minutes until the whites are set.
- 20. Season the fried eggs with salt and pepper.
- 21. Wash the chives thoroughly.
- 22. Dry the chives well.
- 23. Cut the chives into fine rings.
- 24. Take the warm rösti out of the oven.
- 25. Serve the rösti with the fried eggs and fresh chives.
