🍽️ Crispy Potato Rösti with Smoked Salmon Tartare

Ingredients
- dill, fresh 5 g
- smoked salmon 250 g
- organic lemon 1 pc.
- mustard 1 tsp
- olive oil 1 tsp
- salt pinch
- pepper, black ground pinch
- crème fraîche 150 g
- cream horseradish 1 tbsp
- potatoes, waxy 500 g
- zucchini 1 pc.
- eggs 2 pc.
- oil 3 tbsp
- trout roe 4 tbsp
Instructions
- 1. Wash the dill and remove the thick stems. Finely chop the green leaves.
- 2. Finely chop the smoked salmon as well.
- 3. Wash the lemon under hot water.
- 4. Grate about one teaspoon of fine zest from the lemon.
- 5. Halve the lemon and squeeze out the juice.
- 6. Place the chopped salmon, dill, lemon zest, one teaspoon of mustard, and one teaspoon of olive oil into a bowl.
- 7. Mix the ingredients for the tartare well together.
- 8. Season the salmon tartare with salt and pepper to taste.
- 9. Take a second bowl and add the crème fraîche.
- 10. Mix the crème fraîche with one tablespoon of cream and horseradish.
- 11. Season the cream with salt, pepper, and the squeezed lemon juice.
- 12. Wash the potatoes and the zucchini.
- 13. Grate the potatoes and zucchini coarsely.
- 14. Place the grated mixture in a sieve or kitchen towel and squeeze out the liquid well.
- 15. Place the drained grated mixture into a bowl.
- 16. Add an egg and mix everything well.
- 17. Season the potato mixture with salt and pepper.
- 18. Heat three tablespoons of oil in a pan over high heat.
- 19. Take one tablespoon of the potato mixture and form a small rösti in the pan.
- 20. Fry the rösti for about five minutes on the first side until golden brown.
- 21. Flip the rösti and fry for another five minutes on the other side.
- 22. Place the finished rösti on kitchen paper to absorb excess oil.
- 23. Take a rösti and spread one tablespoon of the horseradish cream on top.
- 24. Place a spoonful of the smoked salmon tartare on the cream.
- 25. Garnish the dish with some lemon zest and caviar.
- 26. Serve the rösti immediately and enjoy your meal!
