  1. 1. Wash the dill and remove the thick stems. Finely chop the green leaves.
  2. 2. Finely chop the smoked salmon as well.
  3. 3. Wash the lemon under hot water.
  4. 4. Grate about one teaspoon of fine zest from the lemon.
  5. 5. Halve the lemon and squeeze out the juice.
  6. 6. Place the chopped salmon, dill, lemon zest, one teaspoon of mustard, and one teaspoon of olive oil into a bowl.
  7. 7. Mix the ingredients for the tartare well together.
  8. 8. Season the salmon tartare with salt and pepper to taste.
  9. 9. Take a second bowl and add the crème fraîche.
  10. 10. Mix the crème fraîche with one tablespoon of cream and horseradish.
  11. 11. Season the cream with salt, pepper, and the squeezed lemon juice.
  12. 12. Wash the potatoes and the zucchini.
  13. 13. Grate the potatoes and zucchini coarsely.
  14. 14. Place the grated mixture in a sieve or kitchen towel and squeeze out the liquid well.
  15. 15. Place the drained grated mixture into a bowl.
  16. 16. Add an egg and mix everything well.
  17. 17. Season the potato mixture with salt and pepper.
  18. 18. Heat three tablespoons of oil in a pan over high heat.
  19. 19. Take one tablespoon of the potato mixture and form a small rösti in the pan.
  20. 20. Fry the rösti for about five minutes on the first side until golden brown.
  21. 21. Flip the rösti and fry for another five minutes on the other side.
  22. 22. Place the finished rösti on kitchen paper to absorb excess oil.
  23. 23. Take a rösti and spread one tablespoon of the horseradish cream on top.
  24. 24. Place a spoonful of the smoked salmon tartare on the cream.
  25. 25. Garnish the dish with some lemon zest and caviar.
  26. 26. Serve the rösti immediately and enjoy your meal!
