🍽️ Juicy Roast Beef with Sweet Caramelized Onions and Fluffy Mashed Potatoes

Ingredients
- Roast beef, raw whole piece 1 kg
- Potatoes, floury 1 kg
- Salt pinch
- Oil 4 tbsp
- Pepper, black ground pinch
- Onions, red 2 pcs
- Thyme, fresh 10 g
- Balsamic vinegar, dark 3 tbsp
- Brown sugar 4 tbsp
- Milk 250 ml
- Butter 2 tbsp
- Nutmeg, ground pinch
Instructions
- 1. Take the meat out of the fridge and let it come to room temperature slowly.
- 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 3. Peel the potatoes and wash them thoroughly.
- 4. Cut the potatoes into coarse cubes.
- 5. Put the potatoes in a pot with salted water.
- 6. Bring the water to a boil.
- 7. Reduce the heat to medium.
- 8. Cook the potatoes for about 20 to 25 minutes until they are soft.
- 9. Rinse the roast beef briefly and pat it dry with a kitchen towel.
- 10. Remove any excess fat from the meat.
- 11. Heat 2 tablespoons of oil in a pan on high heat.
- 12. Place the roast beef in the hot pan.
- 13. Sear the meat on all sides for about 5 minutes until golden brown.
- 14. Season the meat with salt and pepper.
- 15. Place the meat in a baking dish.
- 16. Put the baking dish in the oven for about 20 to 35 minutes.
- 17. Halve the onions while the meat is cooking.
- 18. Peel the halved onions.
- 19. Separate the onion rings from each other.
- 20. Wash the thyme under running water.
- 21. Shake the thyme dry.
- 22. Pluck the thyme leaves off the stems.
- 23. Put the onions in a bowl.
- 24. Add balsamic vinegar to the onions.
- 25. Add 2 tablespoons of oil to the onions.
- 26. Add brown sugar to the onions.
- 27. Add the thyme leaves to the onions.
- 28. Mix all the onion ingredients well together.
- 29. Line a baking tray with baking paper.
- 30. Spread the onion mixture on the baking tray.
- 31. Put the baking tray in the oven for about 20 minutes to caramelize the onions.
- 32. Drain the cooked potatoes when they are done.
- 33. Let the potatoes steam with the lid on the pot for a short while.
- 34. Add milk and butter to the potatoes.
- 35. Mash the potatoes with a hand mixer or a potato masher.
- 36. Season the mashed potatoes with nutmeg.
- 37. Season the mashed potatoes finally with salt.
- 38. Take the roast beef out of the oven.
- 39. Slice the roast beef.
- 40. Plate the roast beef.
- 41. Add the mashed potatoes to the plates.
- 42. Add the caramelized onions to the plates.
- 43. Serve the dish and enjoy your meal!
