  1. 1. Take the meat out of the fridge and let it come to room temperature slowly.
  2. 2. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  3. 3. Peel the potatoes and wash them thoroughly.
  4. 4. Cut the potatoes into coarse cubes.
  5. 5. Put the potatoes in a pot with salted water.
  6. 6. Bring the water to a boil.
  7. 7. Reduce the heat to medium.
  8. 8. Cook the potatoes for about 20 to 25 minutes until they are soft.
  9. 9. Rinse the roast beef briefly and pat it dry with a kitchen towel.
  10. 10. Remove any excess fat from the meat.
  11. 11. Heat 2 tablespoons of oil in a pan on high heat.
  12. 12. Place the roast beef in the hot pan.
  13. 13. Sear the meat on all sides for about 5 minutes until golden brown.
