🍽️ Roastbeef with Honey Carrots

Ingredients
- Roast beef, raw whole 1 kg
- salt pinch
- pepper, mixed pinch
- rosemary, fresh 10 g
- thyme, fresh 10 g
- garlic cloves 2 pcs.
- ghee 3 tbsp
- carrots with greens 1 bunch
- butter 5 tbsp
- honey 2 tbsp
- breadcrumbs 75 g
- parmesan 25 g
- parsley, fresh 20 g
Instructions
- 1. Take the meat out of the refrigerator about one hour before cooking.
- 2. Pat the meat dry with a kitchen towel.
- 3. Rub the meat thoroughly with salt and pepper.
- 4. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 5. Wash the herbs and shake them dry.
- 6. Crush the garlic cloves.
- 7. Heat clarified butter in a pan over high heat.
- 8. Sear the roast beef on all sides for about two minutes.
- 9. Place the meat in a baking dish.
- 10. Add the herbs and garlic to the baking dish with the meat.
- 11. Cook the meat in the oven for 30 minutes.
- 12. Cut off the green leafy tops of the carrots about one centimeter above the carrots.
- 13. Set aside the carrot greens.
- 14. Wash the carrots thoroughly.
- 15. Peel the carrots.
- 16. Halve or quarter the carrots lengthwise, depending on their size.
- 17. Melt two tablespoons of butter in a large pan over medium heat.
- 18. Add the carrots to the melted butter.
- 19. Fry the carrots for about 15 minutes until they are soft but still firm to the bite.
- 20. Turn the carrots regularly while frying.
- 21. Add honey, salt, and pepper to the carrots.
- 22. Let the ingredients caramelize.
- 23. Put the remaining butter, breadcrumbs, and Parmesan into a bowl.
- 24. Wash the parsley and shake it dry.
- 25. Finely chop the parsley.
- 26. Add the chopped parsley to the butter mixture.
- 27. Mix all the breadcrumb mixture ingredients well.
- 28. Take the roast beef out of the oven 10 minutes before the end of the cooking time.
- 29. Distribute the parsley breadcrumbs over the roast beef.
- 30. Press the breadcrumbs down slightly.
- 31. Place the roast beef back in the oven to finish cooking.
- 32. Take the roast beef out of the oven after cooking.
- 33. Let the meat rest for 15 minutes.
- 34. Slice the roast beef before serving.
- 35. Serve the meat with the honey carrots and the reserved carrot greens.
