  1. 1. Take the meat out of the refrigerator about one hour before cooking.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Rub the meat thoroughly with salt and pepper.
  4. 4. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  5. 5. Wash the herbs and shake them dry.
  6. 6. Crush the garlic cloves.
  7. 7. Heat clarified butter in a pan over high heat.
  8. 8. Sear the roast beef on all sides for about two minutes.
  9. 9. Place the meat in a baking dish.
  10. 10. Add the herbs and garlic to the baking dish with the meat.
  11. 11. Cook the meat in the oven for 30 minutes.
  12. 12. Cut off the green leafy tops of the carrots about one centimeter above the carrots.
  13. 13. Set aside the carrot greens.
  14. 14. Wash the carrots thoroughly.
  15. 15. Peel the carrots.
  16. 16. Halve or quarter the carrots lengthwise, depending on their size.
  17. 17. Melt two tablespoons of butter in a large pan over medium heat.
  18. 18. Add the carrots to the melted butter.
  19. 19. Fry the carrots for about 15 minutes until they are soft but still firm to the bite.
  20. 20. Turn the carrots regularly while frying.
  21. 21. Add honey, salt, and pepper to the carrots.
  22. 22. Let the ingredients caramelize.
  23. 23. Put the remaining butter, breadcrumbs, and Parmesan into a bowl.
  24. 24. Wash the parsley and shake it dry.
  25. 25. Finely chop the parsley.
  26. 26. Add the chopped parsley to the butter mixture.
  27. 27. Mix all the breadcrumb mixture ingredients well.
  28. 28. Take the roast beef out of the oven 10 minutes before the end of the cooking time.
  29. 29. Distribute the parsley breadcrumbs over the roast beef.
  30. 30. Press the breadcrumbs down slightly.
  31. 31. Place the roast beef back in the oven to finish cooking.
  32. 32. Take the roast beef out of the oven after cooking.
  33. 33. Let the meat rest for 15 minutes.
  34. 34. Slice the roast beef before serving.
  35. 35. Serve the meat with the honey carrots and the reserved carrot greens.
