  1. 1. Roughly tear the iceberg lettuce, wash thoroughly, and drain well. Wash the cucumber and cut into 16 paper-thin slices. In a bowl, mix the fresh cheese and pesto and season with pepper.
  2. 2. Toast the bread slices and spread the pesto-fresh cheese mixture on one side. Then cut each slice into four squares.
  3. 3. Top the toast pieces with iceberg lettuce, roast beef, cucumber slices, and olives as desired. Secure with small skewers if needed, and arrange the roast beef bites decoratively on a plate. Enjoy your meal!
