🍽️ Risi e Bisi – Risotto with Peas and Ham

Ingredients
- Vegetable broth 900 ml
- Onions, yellow 1 pc.
- Butter 3 tbsp
- Risotto rice 300 g
- Boiled ham 200 g
- Parsley, fresh 20 g
- Peas, frozen 300 g
- Parmesan, grated 100 g
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. In a pot, bring the vegetable broth to a boil and keep it warm. Halve the onions, peel them, and dice them finely. In another pot, melt 1 tbsp of butter and sweat the onions in it, stirring, for about 2 minutes until translucent. Add the rice and toast it for approximately 2 minutes.
- 2. Deglaze with a ladle of broth and let it reduce almost completely. Then add another ladle of broth and cook the risotto, stirring constantly, for about 20 minutes until al dente. Keep adding broth as needed so that the risotto remains lightly covered with liquid.
- 3. Quarter the ham and cut it into strips. Wash the parsley, pat it dry, pluck the leaves from the stems, and chop them finely.
- 4. After about 15 minutes, add the peas to the risotto. When the risotto is done, stir in the ham, Parmesan, and 2 tbsp of butter. Season with salt and pepper. Plate the Risi e Bisi and serve sprinkled with parsley. Enjoy your meal!
