  1. 1. Take the steaks out of the fridge about 30 minutes before cooking so they reach room temperature.
  2. 2. Heat sunflower oil in a pan.
  3. 3. If the steak has a fat edge, fry it for about 2 minutes at the edge of the pan until crispy.
  4. 4. Place rosemary sprigs and a pressed clove of garlic in the pan.
  5. 5. Sear the steak for 2 to 3 minutes on each side over high heat.
  6. 6. Reduce the heat to medium-low.
  7. 7. Cover the pan.
  8. 8. Let the steak cook gently for 5 to 8 minutes depending on thickness and desired doneness.
  9. 9. Turn the steak 1 to 2 times during the cooking process.
  10. 10. Baste the steak repeatedly with the flavored cooking fat from the pan.
  11. 11. Melt the butter in the pan.
  12. 12. Fry the steak for 1 minute on each side.
  13. 13. Pour the melted butter over the steak.
  14. 14. Remove the steak from the heat.
  15. 15. Season the steak with salt and pepper.
  16. 16. Let the steak rest for 3 minutes before slicing.
