🍽️ Juicy Beef Steak with Mushroom Duxelles and Leek in Gravy

Ingredients
- Beef top sirloin steaks 600 g
- White mushrooms 500 g
- Garlic cloves 1 pc.
- Parsley, fresh 20 g
- Leek 2 pcs.
- Oil 3 tbsp
- Salt pinch
- Pepper, black ground pinch
- Roast sauce, powder 400 ml
Instructions
- 1. Take the meat out of the fridge so it reaches room temperature.
- 2. Preheat the oven to 140 °C (convection mode).
- 3. Wipe the mushrooms with kitchen paper and chop them finely.
- 4. Halve the garlic, peel one quarter, and chop it finely.
- 5. Wash the parsley, pat it dry, pluck the leaves from the stems, and chop them finely.
- 6. Cut off the root end of the leek.
- 7. Halve the leek lengthwise, open it up, and wash it thoroughly.
- 8. Cut the leek into thin diagonal strips.
- 9. Rinse the beef steak and pat it dry.
- 10. Season the steak to your liking.
- 11. Heat 1 tablespoon of oil in a pan over high heat.
- 12. Sear the meat on both sides for about 30 seconds each.
- 13. Place the steak in a baking dish.
- 14. Leave the pan unwashed for now.
- 15. Heat another 1 tablespoon of oil in the same pan over high heat.
- 16. Fry the mushrooms together with the garlic for about 3 minutes.
- 17. Add the chopped parsley.
- 18. Season the mushroom mixture with salt and pepper.
- 19. Distribute the mushroom mixture evenly over the steak.
- 20. Cook the beef steak in the oven for 9 minutes.
- 21. Clean the pan thoroughly.
- 22. Heat 1 tablespoon of oil in the clean pan over high heat.
- 23. Fry the leek for about 3 minutes.
- 24. Take the steak out of the oven.
- 25. Let the meat rest covered for the remaining time.
- 26. Deglaze the leek with the gravy.
- 27. Simmer the sauce for about 5 minutes over medium heat.
- 28. Season the sauce finally with salt and pepper.
- 29. Cut the meat into portions.
- 30. Plate the steak.
- 31. Add the leek and the sauce.
- 32. Serve the steak with duxelles and jus. Enjoy your meal!
