  1. 1. Take the meat out of the fridge so it reaches room temperature.
  2. 2. Preheat the oven to 140 °C (convection mode).
  3. 3. Wipe the mushrooms with kitchen paper and chop them finely.
  4. 4. Halve the garlic, peel one quarter, and chop it finely.
  5. 5. Wash the parsley, pat it dry, pluck the leaves from the stems, and chop them finely.
  6. 6. Cut off the root end of the leek.
  7. 7. Halve the leek lengthwise, open it up, and wash it thoroughly.
  8. 8. Cut the leek into thin diagonal strips.
  9. 9. Rinse the beef steak and pat it dry.
  10. 10. Season the steak to your liking.
  11. 11. Heat 1 tablespoon of oil in a pan over high heat.
  12. 12. Sear the meat on both sides for about 30 seconds each.
  13. 13. Place the steak in a baking dish.
  14. 14. Leave the pan unwashed for now.
  15. 15. Heat another 1 tablespoon of oil in the same pan over high heat.
  16. 16. Fry the mushrooms together with the garlic for about 3 minutes.
  17. 17. Add the chopped parsley.
  18. 18. Season the mushroom mixture with salt and pepper.
  19. 19. Distribute the mushroom mixture evenly over the steak.
  20. 20. Cook the beef steak in the oven for 9 minutes.
  21. 21. Clean the pan thoroughly.
  22. 22. Heat 1 tablespoon of oil in the clean pan over high heat.
  23. 23. Fry the leek for about 3 minutes.
  24. 24. Take the steak out of the oven.
  25. 25. Let the meat rest covered for the remaining time.
  26. 26. Deglaze the leek with the gravy.
  27. 27. Simmer the sauce for about 5 minutes over medium heat.
  28. 28. Season the sauce finally with salt and pepper.
  29. 29. Cut the meat into portions.
  30. 30. Plate the steak.
  31. 31. Add the leek and the sauce.
  32. 32. Serve the steak with duxelles and jus. Enjoy your meal!
