🍽️ Juicy beef hip steak with fresh olive pesto

Ingredients
- Beef hip 600 g
- Salt Pinch
- Pepper, black ground Pinch
- Parsley, fresh 15 g
- Onions, red 1 pc.
- Olives, green 150 g
- Lemons 1 pc.
- Olive oil 2 tbsp
- Oil 1 tbsp
- Butter 2 tbsp
Instructions
- 1. Take the beef hip steak out of the fridge and let it reach room temperature.
- 2. Rinse the meat under running water and then pat it completely dry with kitchen paper.
- 3. Season the steak generously on both sides with salt and black pepper.
- 4. Wash the parsley and shake off excess water.
- 5. Carefully pick the parsley leaves off the tough stems.
- 6. Halve the onion, peel it, and cut it into very fine cubes.
- 7. Drain the olives in a sieve to let the salt or oil drain away.
- 8. Chop the olives and parsley leaves together roughly.
- 9. Wash the lemon thoroughly.
- 10. Grate about one teaspoon of fine lemon zest.
- 11. Halve the lemon and squeeze out the juice.
- 12. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 13. Take a small bowl and add the olive oil.
- 14. Add two tablespoons of lemon juice to the bowl.
- 15. Add the finely diced onion to the oil-lemon mixture.
- 16. Add the roughly chopped mixture of olives and parsley.
- 17. Stir all the pesto ingredients together well.
- 18. Season the pesto with salt and pepper to taste.
- 19. Set the finished pesto aside until needed.
- 20. Take an ovenproof pan and heat it on the highest stove setting.
- 21. Add some oil and a piece of butter to the hot pan.
- 22. Place the seasoned beef hip steak into the hot pan.
- 23. Sear the steak for about four minutes on the first side.
- 24. Turn the steak and sear it for another four minutes on the other side.
- 25. Place the entire pan with the steak into the preheated oven.
- 26. Cook the steak in the oven for about 25 minutes.
- 27. Carefully take the pan out of the oven.
- 28. Wrap the steak tightly in aluminum foil.
- 29. Let the wrapped steak rest for about 10 minutes.
- 30. Slice the steak into thin slices after resting.
- 31. Drizzle the meat slices with the green olive pesto.
- 32. Serve the steak immediately and enjoy your meal.
