  1. 1. Take the beef hip steak out of the fridge and let it reach room temperature.
  2. 2. Rinse the meat under running water and then pat it completely dry with kitchen paper.
  3. 3. Season the steak generously on both sides with salt and black pepper.
  4. 4. Wash the parsley and shake off excess water.
  5. 5. Carefully pick the parsley leaves off the tough stems.
  6. 6. Halve the onion, peel it, and cut it into very fine cubes.
  7. 7. Drain the olives in a sieve to let the salt or oil drain away.
  8. 8. Chop the olives and parsley leaves together roughly.
  9. 9. Wash the lemon thoroughly.
  10. 10. Grate about one teaspoon of fine lemon zest.
  11. 11. Halve the lemon and squeeze out the juice.
  12. 12. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  13. 13. Take a small bowl and add the olive oil.
  14. 14. Add two tablespoons of lemon juice to the bowl.
  15. 15. Add the finely diced onion to the oil-lemon mixture.
  16. 16. Add the roughly chopped mixture of olives and parsley.
  17. 17. Stir all the pesto ingredients together well.
  18. 18. Season the pesto with salt and pepper to taste.
  19. 19. Set the finished pesto aside until needed.
  20. 20. Take an ovenproof pan and heat it on the highest stove setting.
  21. 21. Add some oil and a piece of butter to the hot pan.
  22. 22. Place the seasoned beef hip steak into the hot pan.
  23. 23. Sear the steak for about four minutes on the first side.
  24. 24. Turn the steak and sear it for another four minutes on the other side.
  25. 25. Place the entire pan with the steak into the preheated oven.
  26. 26. Cook the steak in the oven for about 25 minutes.
  27. 27. Carefully take the pan out of the oven.
  28. 28. Wrap the steak tightly in aluminum foil.
  29. 29. Let the wrapped steak rest for about 10 minutes.
  30. 30. Slice the steak into thin slices after resting.
  31. 31. Drizzle the meat slices with the green olive pesto.
  32. 32. Serve the steak immediately and enjoy your meal.
