  1. 1. Cut onions in half, peel, and dice. Rinse the goulash meat, pat dry, and salt generously. Wash the thyme and let it drain well.
  2. 2. Heat the oil in a large pot over high heat. Brown the meat in batches for about 5 minutes, then remove it from the pot.
  3. 3. Brown the onions together with the last batch of meat. Then add all the meat and the tomato paste to the pot and cook for another 2 minutes. Deglaze with beer and reduce by half.
  4. 4. Pour the beef broth over the beef goulash. Add the thyme and one bay leaf. Season with salt, pepper, and sugar, cover, and simmer over medium heat for about 1.5 to 2 hours. Stir occasionally and add more broth if needed.
  5. 5. In the meantime, wash the pumpkin, cut it in half, remove the stem, and scrape out the seeds. Dice the pumpkin and add it to the goulash about 30 minutes before the end of the cooking time to cook through.
  6. 6. Season the beef goulash with the pumpkin and beer, and serve on plates. Enjoy your meal! Tip: Salted potatoes or gnocchi go well with this.
