🍽️ Tender Beef Strips in Mushroom Cream Sauce with Spätzle

Ingredients
- beef minute steaks 600 g
- chives, fresh 15 g
- mushrooms, white 400 g
- onions, yellow 1 pc.
- oil 3 tbsp
- butter 2 tbsp
- spätzle, fresh 800 g
- salt 1 tbsp
- pepper, black ground pinch
- wheat flour, Type 405 2 tbsp
- dry white wine 50 ml
- whipping cream 400 g
Instructions
- 1. Take the meat out of the refrigerator.
- 2. Rinse the meat under cold water.
- 3. Cut the meat into thin strips.
- 4. Place the meat strips on kitchen paper.
- 5. Wash the chives under running water.
- 6. Dry the chives thoroughly with a cloth or paper.
- 7. Cut the chives into fine rings.
- 8. Wipe the mushrooms with kitchen paper if necessary.
- 9. Slice the mushrooms into thin slices.
- 10. Halve the onion.
- 11. Peel the onion.
- 12. Dice the onion finely.
- 13. Heat 1 tablespoon of oil and some butter in a pan over medium heat.
- 14. Add the spätzle to the hot pan.
- 15. Add a pinch of salt to the spätzle.
- 16. Fry the spätzle for about 10 to 12 minutes.
- 17. Turn the spätzle occasionally so they brown evenly.
- 18. Heat 1 tablespoon of oil in another pan over high heat.
- 19. Season the beef steaks with salt.
- 20. Sear the meat on all sides.
- 21. Fry the meat for about 2 to 3 minutes per side.
- 22. Wrap the seared meat in aluminum foil.
- 23. Let the meat rest in the foil for about 8 minutes.
- 24. Do not clean the pan, but use the pan drippings.
- 25. Add 1 tablespoon of oil to the pan drippings in the pan.
- 26. Heat the oil in the pan drippings.
- 27. Fry the mushrooms for about 2 to 3 minutes.
- 28. Add the diced onions to the pan.
- 29. Fry the onions for another 1 to 2 minutes.
- 30. Season the onion-mushroom mix with salt and pepper.
- 31. Dust the onion-mushroom mix with flour.
- 32. Fry the mixture until light brown, stirring constantly.
- 33. Continue frying the mixture for about 1 to 2 minutes.
- 34. Deglaze the pan with white wine.
- 35. Bring the sauce to a boil.
- 36. Simmer the sauce over medium to high heat for about 2 minutes.
- 37. Add the cream to the sauce.
- 38. Continue simmering the sauce for about 2 minutes.
- 39. Simmer until the sauce is creamy.
- 40. Take the meat out of the aluminum foil.
- 41. Cut the meat into fine strips.
- 42. Season the meat strips with salt and pepper.
- 43. Add the meat along with the released meat juices to the sauce.
- 44. Warm the meat in the sauce for about 2 minutes.
- 45. Garnish the sauce with the chopped chives.
- 46. Plate the spätzle.
- 47. Serve the beef strips with the spätzle.
