  1. 1. Preheat the oven to 170 °C (top/bottom heat). Let the cherries drain in a sieve and collect the juice. Halve and peel the shallots. Wash the beef fillet, pat it dry and season it evenly with salt and pepper.
  2. 2. Heat butter and oil in a pan over high heat and sear the fillets for about 1–2 minutes on each side. Then place the fillets in a baking dish and finish cooking them in the oven for about 10 minutes.
  3. 3. Add the shallots to the pan and sauté them for about 2–3 minutes. Deglaze with 100 ml red wine and bring everything to a boil. Top up the mixture with broth and cherry juice and let it simmer for about 5 minutes.
  4. 4. Strain the sauce into a tall container and catch the shallots in the process. Puree half of the cherries with the sauce. Return the pureed mixture to the pan together with the shallots and the remaining cherries, adjust the seasoning and keep it warm.
  5. 5. Serve the beef fillet on plates together with the cherry red wine sauce. Enjoy your meal! Tip: Green beans and bread dumplings go well with this.
