  1. 1. Fill a large pot with about 2.5 liters of water and add plenty of salt. Place the pot on the stove and bring the water to a boil. Take the beef steaks out of the packaging, rinse them briefly under cold water, and pat them dry with a kitchen towel. Set the meat aside to reach room temperature. Wash the potatoes thoroughly under running water. Peel the potatoes completely and cut them into small, uniform cubes.
  2. 2. Once the salted water is boiling vigorously, add the potato cubes to the pot. Boil the potatoes for about 8 minutes. Remove the potatoes from the water using a slotted spoon. Place them in a colander to cool down. Then pat the potatoes dry with kitchen paper to ensure they become crispy later. Bring the salted water in the pot back to a boil.
  3. 3. Wash the green beans under running water. Pat them dry. Break or cut off the hard ends of the beans. Cut the beans into diagonal, longer pieces. Add the beans to the boiling salted water. Boil the beans for about 8 to 10 minutes. Drain the beans in a colander. Let them cool and dry them thoroughly. Empty the pot and clean it thoroughly.
  4. 4. Halve the shallots and peel them. Cut the shallots into small cubes. Heat 2 tablespoons of oil in a pan over medium heat. Add the shallot cubes to the pan. Sweat the shallots for about 2 minutes until they become transparent and colorless. Remove the shallots from the pan. Add mustard, sweet mustard, vinegar, honey, and 2 tablespoons of oil to a bowl. Stir the shallots into the sauce. Season the mixture with salt, pepper, and sugar to taste. Clean the pan.
  5. 5. Heat 1 tablespoon of oil in the pan over high heat. Season the beef steaks with salt. Sear the steaks in two batches. Sear each side of the steaks for about 1 minute. Wrap the cooked steaks in aluminum foil. Let the meat rest until you are ready to serve. Clean the pan.
  6. 6. Add 2 tablespoons of oil to the hot pan. Fry the potato cubes over medium heat for about 5 to 6 minutes until golden brown. After about 4 minutes, add the beans and 2 tablespoons of butter to the pan. Fry the vegetables briefly until the butter has melted. Season the vegetables with salt and pepper. Divide the vegetables onto the plates. Place the steaks on top. Serve the dish together with the shallot-mustard vinaigrette. Enjoy your meal!
