🍽️ Juicy Beef minute Steaks with Herb Butter and Fan Potatoes

Ingredients
- butter 6 tbsp
- small potatoes, mainly waxy 1 kg
- oil 5 tbsp
- salt pinch
- lemons 1 pc.
- parsley, fresh 20 g
- kohlrabi 1 pc.
- carrots 2 pc.
- whipping cream 100 ml
- pepper, black ground pinch
- minute steaks from beef 600 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan.
- 2. Take the butter out of the fridge to let it soften.
- 3. Wash the potatoes thoroughly.
- 4. Place two chopstick handles parallel on a potato.
- 5. Slice the potato into approx. 0.3 cm thick slices, but do not cut all the way through to the bottom.
- 6. Remove the sticks and fan out the potato.
- 7. Place the fan potatoes with the fan side facing up on a baking sheet.
- 8. Drizzle 2 tablespoons of oil over the potatoes.
- 9. Lightly salt the potatoes.
- 10. Bake the potatoes in the oven for approx. 25 minutes until golden brown.
- 11. Wash the lemon under running water.
- 12. Squeeze the halved lemon and pour the juice into a small bowl.
- 13. Wash the parsley and shake it dry.
- 14. Remove the coarse stems from the parsley.
- 15. Finely chop the parsley leaves.
- 16. Put the soft butter into a bowl.
- 17. Mix the butter with the chopped parsley.
- 18. Season the herb butter with salt and a splash of lemon juice.
- 19. Set the finished herb butter aside.
- 20. Peel the kohlrabi.
- 21. Remove any woody parts from the kohlrabi.
- 22. Wash the carrots.
- 23. Remove the stem end and peel the carrots.
- 24. Dice the kohlrabi and carrots finely.
- 25. Heat 1 tablespoon of oil in a pot over medium heat.
- 26. Add the diced vegetables to the pot.
- 27. Lightly salt the vegetables.
- 28. Sauté the vegetables for approx. 2 minutes.
- 29. Deglaze the vegetables with cream.
- 30. Let the vegetable mixture simmer for approx. 10 to 15 minutes.
- 31. Season the vegetables with some lemon juice, salt, and pepper.
- 32. Wash the beef steaks.
- 33. Pat the steaks dry with kitchen paper.
- 34. Season the steaks with salt on both sides.
- 35. Heat 2 tablespoons of oil in a pan over high heat.
- 36. Sear the steaks on each side for approx. 1 to 2 minutes.
- 37. Pepper the steaks after frying.
- 38. Wrap the steaks in aluminum foil.
- 39. Let the steaks rest in the foil until you serve them.
- 40. Take the fan potatoes out of the oven.
- 41. Place the fan potatoes on the plates.
- 42. Place the beef steaks on the plates.
- 43. Place the vegetable mixture on the plates.
- 44. Place a piece of herb butter on each steak.
- 45. Serve the dish immediately.
- 46. Enjoy your meal!
- 47. Tip: If the butter is too cold, rinse a glass with boiling water.
- 48. Place the warm glass over the butter.
- 49. Wait approx. 4 minutes until the butter is soft.
