  1. 1. Preheat the oven to 220 degrees Celsius with fan.
  2. 2. Take the butter out of the fridge to let it soften.
  3. 3. Wash the potatoes thoroughly.
  4. 4. Place two chopstick handles parallel on a potato.
  5. 5. Slice the potato into approx. 0.3 cm thick slices, but do not cut all the way through to the bottom.
  6. 6. Remove the sticks and fan out the potato.
  7. 7. Place the fan potatoes with the fan side facing up on a baking sheet.
  8. 8. Drizzle 2 tablespoons of oil over the potatoes.
  9. 9. Lightly salt the potatoes.
  10. 10. Bake the potatoes in the oven for approx. 25 minutes until golden brown.
  11. 11. Wash the lemon under running water.
  12. 12. Squeeze the halved lemon and pour the juice into a small bowl.
  13. 13. Wash the parsley and shake it dry.
  14. 14. Remove the coarse stems from the parsley.
  15. 15. Finely chop the parsley leaves.
  16. 16. Put the soft butter into a bowl.
  17. 17. Mix the butter with the chopped parsley.
  18. 18. Season the herb butter with salt and a splash of lemon juice.
  19. 19. Set the finished herb butter aside.
  20. 20. Peel the kohlrabi.
  21. 21. Remove any woody parts from the kohlrabi.
  22. 22. Wash the carrots.
  23. 23. Remove the stem end and peel the carrots.
  24. 24. Dice the kohlrabi and carrots finely.
  25. 25. Heat 1 tablespoon of oil in a pot over medium heat.
  26. 26. Add the diced vegetables to the pot.
  27. 27. Lightly salt the vegetables.
  28. 28. Sauté the vegetables for approx. 2 minutes.
  29. 29. Deglaze the vegetables with cream.
  30. 30. Let the vegetable mixture simmer for approx. 10 to 15 minutes.
  31. 31. Season the vegetables with some lemon juice, salt, and pepper.
  32. 32. Wash the beef steaks.
  33. 33. Pat the steaks dry with kitchen paper.
  34. 34. Season the steaks with salt on both sides.
  35. 35. Heat 2 tablespoons of oil in a pan over high heat.
  36. 36. Sear the steaks on each side for approx. 1 to 2 minutes.
  37. 37. Pepper the steaks after frying.
  38. 38. Wrap the steaks in aluminum foil.
  39. 39. Let the steaks rest in the foil until you serve them.
  40. 40. Take the fan potatoes out of the oven.
  41. 41. Place the fan potatoes on the plates.
  42. 42. Place the beef steaks on the plates.
  43. 43. Place the vegetable mixture on the plates.
  44. 44. Place a piece of herb butter on each steak.
  45. 45. Serve the dish immediately.
