🍽️ Creamy Beef Goulash with Pumpkin and Potatoes

Ingredients
- onions, red 6 pcs.
- garlic cloves 2 pcs.
- hokkaido pumpkin 1 pcs.
- bay leaves, dried 1 pcs.
- rosemary, fresh 10 g
- thyme, fresh 10 g
- beef goulash 600 g
- oil 4 tbsp
- salt pinch
- pepper, black ground pinch
- sugar pinch
- tomato paste 3 tbsp
- red wine, dry 250 ml
- beef broth 1 L
- potatoes, mostly waxy 1 kg
Instructions
- 1. Halve the onion and peel it. Cut the onion into wedges.
- 2. Peel the garlic and chop it finely.
- 3. Wash the pumpkin and halve it. Remove the seeds with a spoon. Cut the flesh into cubes.
- 4. Wash the herbs and shake them dry.
- 5. Rinse the beef and pat it dry with paper towels.
- 6. Heat the oil in a large pot over high heat.
- 7. Sear the goulash meat for about 5 minutes until golden brown.
- 8. Remove the meat from the pot and set it aside.
- 9. Season the meat with salt and pepper.
- 10. Reheat the pot over high heat.
- 11. Sauté the onion, garlic, pumpkin, and herbs in the drippings for about 4 minutes.
- 12. Sprinkle the mixture with sugar.
- 13. Let the ingredients caramelize for about 2 minutes.
- 14. Add the tomato paste and the prepared beef back into the pot.
- 15. Sauté everything for another minute.
- 16. Season the goulash again with salt and pepper.
- 17. Deglaze the goulash with red wine.
- 18. Bring the liquid to a boil for about 2 minutes.
- 19. Pour in the broth.
- 20. Cover the pot.
- 21. Simmer the goulash on medium heat for about 1 to 2 hours until the meat is tender.
- 22. Wash the potatoes and peel them.
- 23. Dice the potatoes.
- 24. Put the potatoes in a pot with salted water.
- 25. Bring the water to a boil.
- 26. Cook the potatoes covered on medium heat for about 20 minutes.
- 27. Drain the potatoes.
- 28. Remove the herbs from the goulash.
- 29. Adjust the seasoning of the goulash.
- 30. Serve the goulash with pumpkin and potatoes on plates.
