  3. 3. Wash the pumpkin and halve it. Remove the seeds with a spoon. Cut the flesh into cubes.
  4. 4. Wash the herbs and shake them dry.
  5. 5. Rinse the beef and pat it dry with paper towels.
  6. 6. Heat the oil in a large pot over high heat.
  7. 7. Sear the goulash meat for about 5 minutes until golden brown.
  8. 8. Remove the meat from the pot and set it aside.
  9. 9. Season the meat with salt and pepper.
  10. 10. Reheat the pot over high heat.
  11. 11. Sauté the onion, garlic, pumpkin, and herbs in the drippings for about 4 minutes.
  12. 12. Sprinkle the mixture with sugar.
  13. 13. Let the ingredients caramelize for about 2 minutes.
  14. 14. Add the tomato paste and the prepared beef back into the pot.
  15. 15. Sauté everything for another minute.
  16. 16. Season the goulash again with salt and pepper.
  17. 17. Deglaze the goulash with red wine.
  18. 18. Bring the liquid to a boil for about 2 minutes.
  19. 19. Pour in the broth.
  20. 20. Cover the pot.
  21. 21. Simmer the goulash on medium heat for about 1 to 2 hours until the meat is tender.
  22. 22. Wash the potatoes and peel them.
  23. 23. Dice the potatoes.
  24. 24. Put the potatoes in a pot with salted water.
  25. 25. Bring the water to a boil.
  26. 26. Cook the potatoes covered on medium heat for about 20 minutes.

  28. 28. Remove the herbs from the goulash.
  29. 29. Adjust the seasoning of the goulash.
  30. 30. Serve the goulash with pumpkin and potatoes on plates.
