  1. 1. Take the beef flank steak out of the fridge and let it reach room temperature.
  2. 2. Wash the meat and pat it dry with a kitchen towel.
  3. 3. Peel the garlic cloves and chop them finely.
  4. 4. Halve the onions, peel them, and slice them into thin rings.
  5. 5. Wash the peppers, remove the stem and seeds.
  6. 6. Cut the peppers into thin strips.
  7. 7. Wash two limes.
  8. 8. Grate about one teaspoon of lime zest.
  9. 9. Squeeze the juice out of the limes.
  10. 10. Quarter one lime for garnish.
  11. 11. Wash the cilantro and shake it dry.
  12. 12. Pick the cilantro leaves off the stems.
  13. 13. Halve the avocado and remove the pit.
  14. 14. Scoop the flesh out of the skin with a spoon.
  15. 15. Cut the avocado into slices.
  16. 16. In a bowl, mix the lime juice, lime zest, 4 tablespoons of oil, 2 tablespoons of soy sauce, garlic, paprika powder, chili powder, cumin, and sugar.
  17. 17. Slice the flank steak into pieces about two centimeters thick.
  18. 18. Place the meat in the spice mixture and let it marinate for about 30 minutes.
  19. 19. Heat a pan with one tablespoon of oil on high heat.
  20. 20. Fry the onions and peppers in it for about three minutes on high heat.
  21. 21. Season the vegetables with one tablespoon of soy sauce.
  22. 22. Remove the vegetables from the pan and set them aside.
  23. 23. Do not clean the pan.
  24. 24. Add another tablespoon of oil to the pan.
  25. 25. Heat the oil on high heat.
  26. 26. Let the marinated meat drain.
  27. 27. Fry the meat in the pan for about seven minutes on all sides.
  28. 28. Heat a second pan on medium heat.
  29. 29. Warm the wraps for about one minute on each side.
  30. 30. Spread crème fraîche on the wraps.
  31. 31. Season the wraps with salt and pepper.
  32. 32. Top the wraps with the meat, avocado, cilantro, and cheese as desired.
  33. 33. Serve the fajitas with the lime wedges.
