  1. 1. Peel the rhubarb, trim the ends thinly, and cut into coarse pieces. In a pot, bring the rhubarb together with honey and 3 tablespoons of water to a boil over medium heat. Then cook until tender for about 10 minutes over low heat and let cool.
  2. 2. In a tall container, puree the rhubarb compote with milk and quark. Serve the rhubarb shake well chilled. Enjoy!
