🍰 Rhubarb-Vanilla Pastry

Ingredients
- milk 650 ml
- sugar 180 g
- vanilla pudding powder 1 packet
- rhubarb 300 g
- apple juice 300 ml
- quark 40 % fat in dr. 150 g
- salt pinch
- sunflower oil 6 tbsp
- wheat flour, type 405 350 g
- baking powder 2 tsp
- powdered sugar 1 tsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Mix 6 tablespoons of milk with 2 tablespoons of sugar and the vanilla pudding powder in a small bowl.
- 3. Bring 500 milliliters of milk to a boil in a pot.
- 4. Stir the prepared pudding mixture into the boiling milk.
- 5. Let the mixture bubble and cook for about 1 minute while stirring constantly.
- 6. Reduce the heat and let the pudding simmer for about 4 minutes until it thickens.
- 7. Pour the hot pudding into a shallow dish.
- 8. Place plastic wrap directly on the surface of the pudding to prevent a skin from forming.
- 9. Let the pudding cool down completely.
- 10. Thoroughly wash the rhubarb and peel it.
- 11. Cut the rhubarb into long pieces.
- 12. Cook the rhubarb pieces in a pot with apple juice and 60 grams of sugar for about 5 minutes.
- 13. Cook the rhubarb until it is almost soft.
- 14. Let the cooked rhubarb drain well.
- 15. Mix quark, 100 grams of sugar, a pinch of salt, the remaining milk, oil, flour, and baking powder in a large bowl.
- 16. Stir the ingredients together to form a smooth dough.
- 17. Dust a work surface with flour and roll out the dough to about 3 millimeters thick.
- 18. Cut the dough into squares with a side length of about 10 centimeters.
- 19. Fold the four corners of each square towards the center.
- 20. Place the folded dough pieces side by side on a baking sheet lined with baking paper.
- 21. Place some of the cooled vanilla pudding in the center of the dough pieces.
- 22. Distribute some of the drained rhubarb on top of the pudding.
- 23. Bake the pastries in the preheated oven for about 20 minutes.
- 24. Let the finished pastries cool down slightly.
- 25. Dust the pastries with powdered sugar before serving.
