Ingredients
- Rhubarb 200 g
- Vanilla pudding powder 1 packet
- Butter 125 g
- Sugar 125 g
- Vanilla sugar 1 packet
- Milk 30 ml
- Eggs 3 pcs.
- Wheat flour, Type 405 200 g
- Baking powder 2 tsp
- Icing sugar 4 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Peel the rhubarb and cut off the tough ends.
- 3. Cut the rhubarb into pieces about 1 to 2 centimeters in size.
- 4. Place the rhubarb pieces into a bowl.
- 5. Mix the rhubarb with the pudding powder.
- 6. Let the mixture sit for a short while to marinate.
- 7. Add butter, sugar, vanilla sugar, milk, and eggs to the mixing container.
- 8. Mix the ingredients for 2 minutes on speed level 4.
- 9. Add flour and baking powder to the mixture.
- 10. Mix everything for 20 seconds on speed level 4.
- 11. Distribute the batter evenly among 12 muffin cups.
- 12. Place the marinated rhubarb pieces on top of the batter in the cups.
- 13. Bake the muffins for about 20 minutes.
- 14. Carefully remove the muffins from the oven.
- 15. Let the muffins cool down.
- 16. Dust the finished muffins with powdered sugar.
- 17. Serve the muffins and enjoy them.
