  1. 1. Wash the rhubarb thoroughly.
  2. 2. Peel the skin if necessary.
  3. 3. Cut the rhubarb into small pieces.
  4. 4. Wash the figs.
  5. 5. Dice the figs.
  6. 6. Rinse the orange with hot water.
  7. 7. Finely grate about 1 teaspoon of orange zest.
  8. 8. Halve the orange.
  9. 9. Squeeze the juice from the orange.
  10. 10. Place 1 kg of the fruit into a pot.
  11. 11. Add the grated orange zest.
  12. 12. Add the orange juice.
  13. 13. Mix everything with gelling sugar.
  14. 14. Let the mixture sit for about 3 hours.
  15. 15. Bring the fruit mixture to a boil while stirring occasionally.
  16. 16. Let the mixture simmer gently for about 4 minutes while stirring continuously.
  17. 17. Place a teaspoon of the jam on a cold plate.
  18. 18. Check if the jam sets after about 1 minute.
  19. 19. Extend the cooking time by 1-2 minutes if it is not set yet.
  20. 20. Repeat the gelling test.
  21. 21. Carefully remove the foam with a spoon.
  22. 22. Fill the hot jam into sterilized screw-top jars.
  23. 23. Seal the jars.
  24. 24. Let the jars cool upside down.
