  2. 2. Peel off the fibrous skin of the stalks.
  3. 3. Cut off the hard ends.
  4. 4. Cut the rhubarb into pieces about 1 cm in size.
  5. 5. Place the rhubarb pieces, sugar, and apple juice into a pot.
  6. 6. Bring the mixture to a boil while stirring occasionally.
  7. 7. Cook the rhubarb for about 4 to 5 minutes until it breaks down.
  8. 8. Allow the rhubarb mixture to cool completely.
  9. 9. Whip the cream in a bowl using a hand mixer and whisk attachment until stiff.
  10. 10. Add the powdered sugar to the whipped cream and mix it in well.
  11. 11. Gently fold the cooled rhubarb puree into the cream.
  12. 12. Fill the dessert into portion glasses or small bowls.
  13. 13. Keep the dessert in the refrigerator until you are ready to serve it.
