🍰 Rhubarb-Grape Compote with Fresh Mint Soy Yogurt

Ingredients
- rhubarb 500 g
- grapes, dark 150 g
- mint, fresh 5 g
- red wine, sweet 150 ml
- sugar 120 g
- soy yogurt 150 g
- vanilla sugar 1 packet
Instructions
- 1. Peel the rhubarb and cut off the tough ends. Cut the vegetable into coarse pieces.
- 2. Wash the grapes thoroughly. Then cut them in half.
- 3. Wash the mint and shake it dry. Finely chop the leaves.
- 4. Put red wine and sugar into a pot. Heat the mixture on medium heat until it boils.
- 5. Add the rhubarb pieces and the halved grapes to the pot. Stir everything well.
- 6. Let the compote simmer for about 10 minutes.
- 7. Take a separate bowl. Add the soy yogurt, the chopped mint, and the vanilla sugar.
- 8. Stir the yogurt mixture until it is uniform.
- 9. Distribute the warm compote onto individual plates.
- 10. Let the compote cool down briefly.
- 11. Add a spoonful of the mint-yogurt mixture as a topping. Serve the dish.
