  1. 1. Preheat the oven to 240 degrees Celsius using top and bottom heat.
  2. 2. Rinse the Kasseler (smoked pork belly) under cold running water.
  3. 3. Pat the meat dry thoroughly with a kitchen towel.
  4. 4. Wrap the Kasseler tightly in aluminum foil.
  5. 5. Place the foil packet in the oven for 15 minutes to warm the meat.
  6. 6. Remove the meat from the oven and keep it warm in the closed foil until needed.
  7. 7. Slice the pickles into thin rounds.
  8. 8. Wash the chives and shake off excess water.
  9. 9. Cut the chives into fine rings.
  10. 10. Place the sauerkraut in a colander and let it drain well.
  11. 11. Squeeze the sauerkraut lightly with your hands to remove excess moisture.
  12. 12. Wash the carrot and peel it.
  13. 13. Grate the carrot coarsely.
  14. 14. Place the grated carrot into a bowl.
  15. 15. Add the drained sauerkraut to the carrot in the bowl.
  16. 16. Add the pickle slices and chives to the mixture.
  17. 17. Season the salad to taste with a little pickle juice, salt, pepper, and sugar.
  18. 18. Mix mayonnaise, tomato ketchup, and one teaspoon of pickle juice in a small bowl.
  19. 19. Adjust the dressing to taste with salt and pepper.
  20. 20. Slice the bread rolls in half horizontally.
  21. 21. Spread the dressing evenly over the cut surfaces of the bread.
  22. 22. Place the bread on a baking sheet lined with baking paper.
  23. 23. Spread Gouda cheese evenly over each bread half.
  24. 24. Top the cheese layer with a portion of the sauerkraut mixture.
  25. 25. Place the baking sheet in the upper part of the oven.
  26. 26. Grill the sandwiches for about 4 minutes until the cheese melts.
  27. 27. Take the Kasseler out of the foil.
  28. 28. Slice the meat into thick slices.
  29. 29. Slice the thick slices as thinly as possible.
  30. 30. Remove the bread from the oven.
  31. 31. Arrange the thin Kasseler slices on one bread half.
  32. 32. Cover the topped half with the other bread half.
  33. 33. Serve the sandwiches hot on plates.
  34. 34. Serve the remaining sauerkraut on the side.
