🍽️ Crispy Reuben Sandwich with Kasseler and Sauerkraut

Ingredients
- Kasseler, in one piece 400 g
- Pickles 2 pcs.
- Chives, fresh 10 g
- Sauerkraut 300 g
- Carrots 1 pc.
- Salt pinch
- Pepper, black ground pinch
- Sugar pinch
- Mayonnaise 3 tbsp
- Ketchup 3 tbsp
- Farmhouse bread 8 slices
- Gouda, grated 150 g
Instructions
- 1. Preheat the oven to 240 degrees Celsius using top and bottom heat.
- 2. Rinse the Kasseler (smoked pork belly) under cold running water.
- 3. Pat the meat dry thoroughly with a kitchen towel.
- 4. Wrap the Kasseler tightly in aluminum foil.
- 5. Place the foil packet in the oven for 15 minutes to warm the meat.
- 6. Remove the meat from the oven and keep it warm in the closed foil until needed.
- 7. Slice the pickles into thin rounds.
- 8. Wash the chives and shake off excess water.
- 9. Cut the chives into fine rings.
- 10. Place the sauerkraut in a colander and let it drain well.
- 11. Squeeze the sauerkraut lightly with your hands to remove excess moisture.
- 12. Wash the carrot and peel it.
- 13. Grate the carrot coarsely.
- 14. Place the grated carrot into a bowl.
- 15. Add the drained sauerkraut to the carrot in the bowl.
- 16. Add the pickle slices and chives to the mixture.
- 17. Season the salad to taste with a little pickle juice, salt, pepper, and sugar.
- 18. Mix mayonnaise, tomato ketchup, and one teaspoon of pickle juice in a small bowl.
- 19. Adjust the dressing to taste with salt and pepper.
- 20. Slice the bread rolls in half horizontally.
- 21. Spread the dressing evenly over the cut surfaces of the bread.
- 22. Place the bread on a baking sheet lined with baking paper.
- 23. Spread Gouda cheese evenly over each bread half.
- 24. Top the cheese layer with a portion of the sauerkraut mixture.
- 25. Place the baking sheet in the upper part of the oven.
- 26. Grill the sandwiches for about 4 minutes until the cheese melts.
- 27. Take the Kasseler out of the foil.
- 28. Slice the meat into thick slices.
- 29. Slice the thick slices as thinly as possible.
- 30. Remove the bread from the oven.
- 31. Arrange the thin Kasseler slices on one bread half.
- 32. Cover the topped half with the other bread half.
- 33. Serve the sandwiches hot on plates.
- 34. Serve the remaining sauerkraut on the side.
