  9. 9. Wash the parsley and chives under running water.
  10. 10. Shake the herbs dry.
  11. 11. Remove any thick stems from the parsley and chives if necessary.
  12. 12. Finely chop the parsley and chives.
  13. 13. Add mayonnaise, mustard, and yogurt to a clean bowl.
  14. 14. Mix the three ingredients thoroughly.
  15. 15. Stir the drained shallot into the mayonnaise mixture.
  16. 16. Stir in the chopped gherkins and capers.
  17. 17. Season the remoulade with salt and pepper to taste.
  18. 18. Serve the finished remoulade with meat or fish dishes.
