🍰 Rice Mango Muffins

Ingredients
- Basmati rice 150 g
- Oranges 1 pc.
- Mango 1 pc.
- Wheat flour, Type 405 250 g
- Baking powder 1 tsp
- Brown sugar 100 g
- Vanilla sugar 2 tsp
- Salt pinch
- Yogurt, plain 100 g
- Eggs 1 pc.
- Sunflower oil 75 ml
Instructions
- 1. Preheat the oven to 200 °C (fan). Bring the rice with about 300 ml water to a boil in a pot and let it cook covered for approx. 10 minutes over medium heat. Then let the rice cool down.
- 2. Wash the orange with hot water, finely grate about 1 tsp of the peel, halve it and squeeze out the juice. Peel the mango, cut the flesh off the pit and dice it.
- 3. Mix the cooled rice with flour, baking powder, sugar, vanilla sugar and salt in a bowl. In another bowl, whisk together orange juice, peel, yogurt, egg and oil. Briefly fold the mixture into the flour-rice mixture. Add the mango.
- 4. Distribute the batter into a muffin tin lined with paper liners. Bake the rice-mango muffins in the oven for about 35 minutes, until golden brown. Enjoy your meal!
