  1. 1. Preheat the oven to 200 °C (fan). Bring the rice with about 300 ml water to a boil in a pot and let it cook covered for approx. 10 minutes over medium heat. Then let the rice cool down.
  2. 2. Wash the orange with hot water, finely grate about 1 tsp of the peel, halve it and squeeze out the juice. Peel the mango, cut the flesh off the pit and dice it.
  3. 3. Mix the cooled rice with flour, baking powder, sugar, vanilla sugar and salt in a bowl. In another bowl, whisk together orange juice, peel, yogurt, egg and oil. Briefly fold the mixture into the flour-rice mixture. Add the mango.
  4. 4. Distribute the batter into a muffin tin lined with paper liners. Bake the rice-mango muffins in the oven for about 35 minutes, until golden brown. Enjoy your meal!
