🍰 Colorful Rainbow Cake

Ingredients
- Eggs 6 pcs.
- Vanilla Sugar 1 packet
- Icing sugar 600 g
- Mineral water, classic 100 ml
- Oil 120 ml
- Wheat flour, Type 405 200 g
- Cornstarch 100 g
- Baking powder 2 tsp
- Food coloring, blue 2 tsp
- Food coloring, green 2 tsp
- Food coloring, yellow 2 tsp
- Food coloring, red 2 tsp
- butter 200 g
- Cream cheese, plain 400 g
- Sugar pearls 100 g
Instructions
- 1. Put eggs, vanilla sugar, and 200 grams of powdered sugar into a bowl.
- 2. Whisk the mixture with a hand mixer and whisk attachment for about 5 minutes until foamy.
- 3. Stir mineral water and oil into the egg mixture.
- 4. Gently fold in flour, cornstarch, and baking powder.
- 5. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 6. Divide the cake batter into 6 equal portions.
- 7. Add 1 teaspoon of food coloring to each portion.
- 8. Color the batters strongly in purple, blue, green, yellow, orange, and red.
- 9. Mix 1 part red and 3 to 4 parts yellow color to make orange.
- 10. Mix 1 part blue and 3 to 4 parts red color to make purple.
- 11. Line a 24-centimeter springform pan with baking paper.
- 12. Grease the sides of the pan.
- 13. Pour the first colored batter into the pan and smooth it out.
- 14. Bake the layer in the preheated oven for about 13 minutes.
- 15. Let the cake layer cool down completely.
- 16. Remove the cooled layer from the pan.
- 17. Repeat steps 13 to 16 for all remaining batter colors.
- 18. Whisk soft butter and 400 grams of powdered sugar in a bowl until foamy.
- 19. Fold cream cheese into the butter cream.
- 20. Keep the cream cool until you are ready to use it.
- 21. Spread about 2 tablespoons of cream onto the first cooled cake layer.
- 22. Stack the remaining cake layers on top of each other.
- 23. Cover the entire cake with the remaining cream.
- 24. Sprinkle the cake with colorful sugar pearls.
