Ingredients
- Eggs 6 pcs.
- Vanilla Sugar 2 tsp.
- Icing sugar 400 g
- Mineral water, classic 100 ml
- Oil 120 ml
- Wheat flour, Type 405 200 g
- Cornstarch 100 g
- Baking powder 2 tsp.
- Food coloring, blue 2 tsp.
- Food coloring, green 2 tsp.
- Food coloring, yellow 2 tsp.
- Food coloring, red 2 tsp.
- Butter 100 g
- Cream cheese, plain 200 g
- Sugar pearls 100 g
Instructions
- 1. In a bowl, beat eggs, vanilla sugar, and 200 g icing sugar with a hand mixer and whisk until foamy for about 5 minutes. Add mineral water and oil and mix well. Gently fold in flour, cornstarch, and baking powder.
- 2. Preheat the oven to 180 °C (top/bottom heat). Divide the cake batter evenly into 4 bowls (each about 200 g). Intensely color each portion of dough with 2 tsp. of food coloring in blue, green, yellow, and red.
- 3. Line a springform pan (26 cm diameter) with baking paper and grease the sides. Pour the batters into the springform pan one after the other and bake for about 50 minutes. Then let cool on a cake rack.
- 4. In the meantime, beat soft butter and 200 g icing sugar in a bowl until fluffy. Then stir in the cream cheese and keep cool until ready to use.
- 5. Spread the rainbow cake with the frosting and decorate with colorful sugar pearls. Enjoy!
