  1. 1. Preheat the oven to 200 °C (convection). Bake the baguette there for about 8 minutes, until it is golden brown.
  2. 2. Wash the arugula in a sieve and let it drain. Wash the sweet potato thoroughly, peel, halve and shred into thin strips. Wash the zucchini as well, halve and cut into thin strips. Peel the red onion, halve it and cut it into thin strips.
  3. 3. Heat oil in a pan over medium heat. Fry the sweet potato strips for about 2 minutes, then add the zucchini and onion strips and fry everything for another 4 minutes. Season the vegetables with salt, pepper and sugar.
  4. 4. Cut the mozzarella into thin slices. Take the baguette out of the oven and halve it lengthwise. Top the cut surface of the upper part with mozzarella and bake it for another 5 minutes in the oven.
  5. 5. Spread the crème fraîche on the lower part of the baguette, top it with the vegetables and sprinkle the arugula evenly over it.
  6. 6. Take the lid with mozzarella out of the oven, place it on the topped lower part and cut the baguette crosswise into two or four pieces. Plate the rainbow baguette and serve.
