  1. 1. Fill a large pot with about 3 liters of water and add salt. Place the pot on the stove and bring the water to a boil.
  2. 2. Wash the tomatoes thoroughly under running water. Cut off the hard stem at the top and dice the flesh into small cubes.
  3. 3. Cut the onion in half. Remove the dry outer skin and cut the onion flesh into very fine cubes.
  4. 4. Take a small bowl and add 2 tablespoons of olive oil and one teaspoon of honey. Season the mixture with a pinch of salt and a pinch of pepper.
  5. 5. Stir the ingredients in the bowl vigorously until the honey has mixed well with the oil.
  6. 6. Add the diced tomatoes to the bowl with the oil-honey mixture. Mix everything well and set the bowl aside to allow the tomatoes to absorb the flavors.
  7. 7. Take a large pan and add 2 tablespoons of olive oil. Place the pan on the stove and heat the oil over medium heat.
  8. 8. Add the finely diced onions to the hot pan. Sauté the onions for about 3 minutes until they are soft and fragrant.
  9. 9. Deglaze the onions in the pan with cream. This means you pour the cream directly into the hot pan.
  10. 10. Add the marinated tomatoes and the creamed spinach to the cream in the pan. Stir everything well.
  11. 11. Let the sauce with the ingredients simmer for about 5 minutes until it has thickened.
  12. 12. Add the ravioli to the pot with the boiling salted water. Cook the ravioli for about 4 minutes. They should still have a slight bite (al dente).
  13. 13. Drain the water from the ravioli. Use a colander and let the pasta drip briefly.
  14. 14. Add the drained ravioli directly to the pan with the sauce. Gently mix the pasta with the sauce so that it is completely covered.
  15. 15. Taste the sauce again with salt and pepper. Adjust the seasoning to your liking.
  16. 16. Take deep plates and portion the ravioli with the sauce onto them. Serve the dish immediately while warm.
