🍽️ Creamy Ravioli with Tomatoes and Spinach

Ingredients
- Salt Pinch
- Vine tomatoes 2 pcs.
- Onions, red 1 pcs.
- Honey 8 g
- Olive oil 4 tbsp
- Pepper, black ground Pinch
- Whipping cream 100 g
- Creamed spinach, frozen 400 g
- Filled pasta, ricotta spinach 800 g
Instructions
- 1. Fill a large pot with about 3 liters of water and add salt. Place the pot on the stove and bring the water to a boil.
- 2. Wash the tomatoes thoroughly under running water. Cut off the hard stem at the top and dice the flesh into small cubes.
- 3. Cut the onion in half. Remove the dry outer skin and cut the onion flesh into very fine cubes.
- 4. Take a small bowl and add 2 tablespoons of olive oil and one teaspoon of honey. Season the mixture with a pinch of salt and a pinch of pepper.
- 5. Stir the ingredients in the bowl vigorously until the honey has mixed well with the oil.
- 6. Add the diced tomatoes to the bowl with the oil-honey mixture. Mix everything well and set the bowl aside to allow the tomatoes to absorb the flavors.
- 7. Take a large pan and add 2 tablespoons of olive oil. Place the pan on the stove and heat the oil over medium heat.
- 8. Add the finely diced onions to the hot pan. Sauté the onions for about 3 minutes until they are soft and fragrant.
- 9. Deglaze the onions in the pan with cream. This means you pour the cream directly into the hot pan.
- 10. Add the marinated tomatoes and the creamed spinach to the cream in the pan. Stir everything well.
- 11. Let the sauce with the ingredients simmer for about 5 minutes until it has thickened.
- 12. Add the ravioli to the pot with the boiling salted water. Cook the ravioli for about 4 minutes. They should still have a slight bite (al dente).
- 13. Drain the water from the ravioli. Use a colander and let the pasta drip briefly.
- 14. Add the drained ravioli directly to the pan with the sauce. Gently mix the pasta with the sauce so that it is completely covered.
- 15. Taste the sauce again with salt and pepper. Adjust the seasoning to your liking.
- 16. Take deep plates and portion the ravioli with the sauce onto them. Serve the dish immediately while warm.
