🍽️ Creamy Kohlrabi on Mashed Potatoes with Crispy Pumpernickel Bits

Ingredients
- potatoes, floury 1 kg
- salt pinch
- kohlrabi 3 pcs.
- spring onions 1 bunch
- butter 3 tbsp
- oil 2 tbsp
- pepper, black ground pinch
- whipping cream 200 g
- sugar pinch
- pumpernickel 2 slices
- parsley, fresh 20 g
- milk 100 ml
Instructions
- 1. Peel the potatoes and cut them into large cubes.
- 2. Place the potato cubes in a pot and cover them with salted water.
- 3. Bring the water to a boil and reduce the heat to medium.
- 4. Cook the potatoes covered for about 15 minutes until they are soft.
- 5. Peel the kohlrabi and remove any woody parts.
- 6. Cut the kohlrabi into cubes.
- 7. Wash the spring onions and cut off the roots.
- 8. Cut the white part of the spring onions into thin rings.
- 9. Cut the green part of the spring onions diagonally into rings.
- 10. Heat 1 tablespoon of butter and 1 tablespoon of oil in a pot over medium heat.
- 11. Add the white spring onion rings and the kohlrabi cubes to the pot.
- 12. Season the vegetables with salt and pepper.
- 13. Sauté the vegetables for about 5 minutes.
- 14. Deglaze the vegetables with cream.
- 15. Bring the mixture to a boil.
- 16. Let the dish simmer gently for about 10 minutes.
- 17. Adjust the sauce with sugar, salt, and pepper.
- 18. Stir in the green spring onion rings after about 8 minutes.
- 19. Coarsely crush the pumpernickel bread.
- 20. Heat 1 tablespoon of oil in a frying pan over medium heat.
- 21. Toast the pumpernickel pieces for about 3 minutes.
- 22. Season the toasted pieces with salt.
- 23. Let the pumpernickel crumbs cool on a kitchen towel.
- 24. Wash the parsley and shake it dry.
- 25. Pluck the parsley leaves from the stems.
- 26. Finely chop the parsley leaves.
- 27. Drain the potatoes, using the pot lid to hold them back.
- 28. Add the remaining butter and milk to the potatoes.
- 29. Mash the potatoes into a puree using a potato masher.
- 30. Season the mashed potatoes with salt and pepper.
- 31. Place the mashed potatoes onto the plates.
- 32. Top the mashed potatoes with the creamy kohlrabi.
- 33. Sprinkle the dish with the pumpernickel crumbs.
- 34. Sprinkle the dish with the chopped parsley.
