🍽️ Creamy Sliced Meat with Mushrooms, Spaetzle and Chives

Ingredients
- Pork loin cutlets from the top round 600 g
- Yellow onions 1 pc
- White mushrooms 500 g
- Oil 3 tbsp
- Salt pinch
- Black ground pepper pinch
- Whipping cream 200 g
- Fresh spätzle 800 g
- Fresh chives 10 g
Instructions
- 1. Rinse the meat under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the meat into thin strips.
- 4. Halve the onion and remove the skin.
- 5. Dice the onion finely.
- 6. Wipe the mushrooms with a cloth if necessary.
- 7. Cut the mushrooms into eighths.
- 8. Heat 1 tablespoon of oil in a pan over high heat.
- 9. Sear the meat quickly.
- 10. Cook the meat for about 2 minutes.
- 11. Remove the meat from the pan.
- 12. Place the meat on a plate.
- 13. Season the meat with salt.
- 14. Season the meat with pepper.
- 15. Leave the pan with the meat juices in place.
- 16. Add 2 tablespoons of oil to the pan.
- 17. Increase the heat.
- 18. Fry the mushrooms.
- 19. Cook the mushrooms for about 3 minutes.
- 20. Add the diced onions to the pan.
- 21. Reduce the heat to medium.
- 22. Cook the onions along with the mushrooms.
- 23. Cook the onions for another 3 minutes.
- 24. Deglaze the pan with cream.
- 25. Simmer the sauce for about 3 minutes.
- 26. Simmer until the sauce is creamy.
- 27. Stir the meat into the sauce.
- 28. Add the meat juices from the plate.
- 29. Keep the sliced meat warm.
- 30. Season the sauce with salt.
- 31. Season the sauce with pepper.
- 32. Fill a large pot with about 5 liters of water.
- 33. Add salt to the water.
- 34. Bring the salted water to a boil.
- 35. Add the spaetzle to the boiling water.
- 36. Cook the spaetzle for about 2 minutes.
- 37. Drain the spaetzle in a colander.
- 38. Let the spaetzle drain well.
- 39. Wash the chives.
- 40. Shake the chives dry.
- 41. Cut the chives into fine rings.
- 42. Plate the sliced meat.
- 43. Plate the spaetzle on the plates.
- 44. Sprinkle the dish with chives.
