🍽️ Creamy Schupfnudeln with Sauerkraut and Bacon

Ingredients
- Oil 6 tbsp
- Bacon strips 125 g
- Sauerkraut 500 g
- Mini Roman lettuce 2 pcs
- Pears 1 pc
- Organic Limes 1 pc
- Mustard 1 tsp
- Honey 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Schupfnudeln 800 g
- Sugar pinch
- Heavy cream 200 ml
Instructions
- 1. Heat 1 tablespoon of oil in a frying pan over high heat.
- 2. Fry the bacon strips for about 3 minutes.
- 3. Place the sauerkraut in a colander and squeeze it well.
- 4. Add the squeezed sauerkraut to the bacon in the pan.
- 5. Fry the mixture over medium heat for approx. 10 minutes.
- 6. Stir occasionally while doing so.
- 7. Cut the romaine lettuce lengthwise into two halves.
- 8. Trim the hard core at the bottom thinly.
- 9. Cut the lettuce leaves crosswise into strips approx. 1 cm wide.
- 10. Wash the cut lettuce strips.
- 11. Wash the pear.
- 12. Cut the pear lengthwise into quarters.
- 13. Remove the core of the pear.
- 14. Dice the pear flesh finely.
- 15. Halve the lime.
- 16. Squeeze the juice from the lime.
- 17. Put 2 tablespoons of lime juice into a bowl.
- 18. Add 2 tablespoons of oil to the bowl.
- 19. Add mustard and honey to the bowl.
- 20. Whisk the ingredients for the dressing well.
- 21. Season the dressing with salt and pepper.
- 22. Add the romaine lettuce to the dressing.
- 23. Add the pear cubes to the dressing.
- 24. Mix everything well together.
- 25. Heat 3 tablespoons of oil in a frying pan over medium heat.
- 26. Fry the Schupfnudeln (German potato dumplings) in the pan.
- 27. Turn the Schupfnudeln occasionally.
- 28. Fry the Schupfnudeln for approx. 5 minutes.
- 29. Fry them until golden brown and crispy.
- 30. Add the whipping cream to the Schupfnudeln.
- 31. Let the cream boil briefly with the Schupfnudeln.
- 32. Season the creamy Schupfnudeln with salt and pepper.
- 33. Season the sauerkraut with salt and pepper.
- 34. Plate the creamy Schupfnudeln.
- 35. Serve the Schupfnudeln with the sauerkraut.
- 36. Serve the Schupfnudeln with the romaine pear salad.
