  1. 1. Gently clean the mushrooms with a kitchen towel and slice them thinly.
  2. 2. Halve the onions, peel them, and cut them into wedges.
  3. 3. Wash the parsley, shake off excess water, and finely chop the leaves.
  4. 4. Heat one tablespoon of oil in a frying pan over high heat.
  5. 5. Sauté the onion wedges for about five minutes until they are translucent but not brown.
  6. 6. Add one teaspoon of sugar and two tablespoons of balsamic vinegar to the pan.
  7. 7. Swirl the pan briefly and season the onions with salt.
  8. 8. Turn on your raclette grill and let it preheat.
  9. 9. Fill the small raclette pans with the mushrooms and the balsamic onions.
  10. 10. Place a portion of raclette cheese on top of each filling.
  11. 11. Melt the cheese for about ten minutes in the raclette grill.
  12. 12. Sprinkle the finished raclette with the chopped parsley and serve immediately.
