🍰 Berry Raclette with Crispy Meringue Topping

Ingredients
- almonds, sliced 20 g
- raspberries, fresh 125 g
- blackberries, fresh 125 g
- blueberries, fresh 125 g
- egg whites 2 pcs.
- salt pinch
- sugar 100 g
- butter 1 tbsp
Instructions
- 1. Toast the sliced almonds in a pan without added fat until golden brown.
- 2. Let the toasted almonds cool down completely on a plate.
- 3. Wash the berries if necessary and let them drain well.
- 4. Gently mix the drained berries in a bowl.
- 5. Whip the egg whites from two eggs together with a pinch of salt until stiff.
- 6. Stir in 100 grams of sugar gradually into the egg whites.
- 7. Continue beating the mixture until it is shiny and forms stiff peaks.
- 8. Lightly grease the small raclette pans with butter.
- 9. Place one portion of the berry mixture into each prepared pan.
- 10. Place a spoonful of the freshly prepared meringue mixture on top of the berries.
- 11. Broil the pans in the raclette grill until the meringue is lightly browned.
- 12. Watch carefully so the meringue does not burn, as it caramelizes very quickly.
- 13. Garnish the finished dessert with the cooled sliced almonds.
