🥗 Quinoa Salad with Strawberries

Ingredients
- Quinoa 300 g
- Salt Pinch
- Spring onions 2 pcs.
- Onions, red 1 pc.
- Strawberries 500 g
- Mixed salad leaves 300 g
- Organic Lemons 1 pc.
- Walnut kernels 60 g
- Olive oil 3 tbsp
- Pepper, black ground Pinch
- Beet syrup 1 tsp
Instructions
- 1. Rinse quinoa thoroughly in a sieve under hot water. Then bring to a boil with about 900 ml of salted water in a pot, cover, and let it simmer on low heat for about 12 minutes.
- 2. Clean the spring onions, trim the roots, and slice them into thin rings. Halve the onion, peel it, and slice it into thin rings as well. Rinse the strawberries, remove the tops, and slice them.
- 3. Wash the salad and let it drain well. Rinse the lemon, zest about 1 tsp of the peel, cut it in half, and squeeze out the juice. Coarsely chop the walnuts.
- 4. In a bowl, mix the quinoa with the spring onions, onions, strawberries, salad, lemon zest, and walnuts. Season with olive oil, lemon juice, beet syrup, salt, and pepper, and serve on plates.
