🥗 Fresh Quinoa Salad with Apricots

Ingredients
- Quinoa 300 g
- Salt pinch
- Spinach 200 g
- Apricots, fresh 100 g
- Buttermilk 100 ml
- Olive oil 4 tbsp
- Pepper, black ground pinch
- Pumpkin seeds 100 g
Instructions
- 1. Rinse the quinoa thoroughly in a fine mesh sieve with lukewarm water.
- 2. Bring about 700 milliliters of salted water to a boil in a pot over high heat.
- 3. Stir the rinsed quinoa into the boiling water.
- 4. Simmer the quinoa over low heat for about 12 minutes.
- 5. Remove the pot from the heat and let the quinoa steam covered for another 5 minutes.
- 6. Wash the spinach and let it drain well.
- 7. Cut the apricots into small pieces.
- 8. Add the quinoa, apricots, buttermilk, olive oil, spinach, salt, and pepper to a large bowl.
- 9. Mix all ingredients thoroughly together.
- 10. Plate the salad on dishes.
- 11. Sprinkle the salad with pumpkin seeds.
- 12. Serve the salad immediately.
