  1. 1. Wash the basil thoroughly and dry the leaves.
  2. 2. Remove the thick stems from the basil.
  3. 3. Place the basil, walnuts, 5 tablespoons of cold water, 2 teaspoons of olive oil, and a pinch of salt and pepper into a tall container.
  4. 4. Blend the mixture with an immersion blender until smooth.
  5. 5. Set the sauce aside to cool down.
  6. 6. Bring 800 milliliters of salted water to a boil in a pot.
  7. 7. Rinse the quinoa in a sieve under running water.
  8. 8. Add the quinoa to the boiling salted water.
  9. 9. Let the quinoa cook covered for about 15 minutes.
  10. 10. Bring about 1 liter of salted water to a boil in a second pot.
  11. 11. Wash the carrots and kohlrabi thoroughly.
  12. 12. Peel the kohlrabi and remove any woody parts.
  13. 13. Slice the kohlrabi into thin rounds.
  14. 14. Cut the kohlrabi slices into thin matchsticks.
  15. 15. Slice the carrots lengthwise into thin rounds.
  16. 16. Cut the carrot slices into thin matchsticks as well.
  17. 17. Add the kohlrabi and carrot matchsticks to the second pot with the boiling water.
  18. 18. Cook the vegetables for about 5 minutes over medium heat.
  19. 19. Wash the fennel thoroughly.
  20. 20. Quarter the fennel.
  21. 21. Remove the hard core (core out) from the fennel.
  22. 22. Slice the fennel into thin strips.
  23. 23. Drain the cooked kohlrabi and carrot vegetables in a sieve.
  24. 24. Heat 1 teaspoon of olive oil in the same pot.
  25. 25. Add the fennel, kohlrabi, and carrots to the pot.
  26. 26. Sauté the vegetables for about 5 minutes over medium heat.
  27. 27. Drain the cooked quinoa.
  28. 28. Distribute the quinoa onto the plates.
  29. 29. Season the vegetables with salt and pepper to taste.
  30. 30. Place the vegetables next to the quinoa on the plates.
  31. 31. Drizzle the walnut-basil sauce over the dish.
  32. 32. Serve the dish immediately and enjoy!
