🍽️ Quinoa Bowl with Colorful Vegetables and Creamy Walnut-Basil Sauce

Ingredients
- Basil, fresh 40 g
- Walnut kernels 60 g
- Olive oil 3 tbsp
- Salt pinch
- Pepper, black ground pinch
- quinoa 220 g
- Carrots 4 pcs
- Celeriac 2 pcs
- Fennel 2 pcs
Instructions
- 1. Wash the basil thoroughly and dry the leaves.
- 2. Remove the thick stems from the basil.
- 3. Place the basil, walnuts, 5 tablespoons of cold water, 2 teaspoons of olive oil, and a pinch of salt and pepper into a tall container.
- 4. Blend the mixture with an immersion blender until smooth.
- 5. Set the sauce aside to cool down.
- 6. Bring 800 milliliters of salted water to a boil in a pot.
- 7. Rinse the quinoa in a sieve under running water.
- 8. Add the quinoa to the boiling salted water.
- 9. Let the quinoa cook covered for about 15 minutes.
- 10. Bring about 1 liter of salted water to a boil in a second pot.
- 11. Wash the carrots and kohlrabi thoroughly.
- 12. Peel the kohlrabi and remove any woody parts.
- 13. Slice the kohlrabi into thin rounds.
- 14. Cut the kohlrabi slices into thin matchsticks.
- 15. Slice the carrots lengthwise into thin rounds.
- 16. Cut the carrot slices into thin matchsticks as well.
- 17. Add the kohlrabi and carrot matchsticks to the second pot with the boiling water.
- 18. Cook the vegetables for about 5 minutes over medium heat.
- 19. Wash the fennel thoroughly.
- 20. Quarter the fennel.
- 21. Remove the hard core (core out) from the fennel.
- 22. Slice the fennel into thin strips.
- 23. Drain the cooked kohlrabi and carrot vegetables in a sieve.
- 24. Heat 1 teaspoon of olive oil in the same pot.
- 25. Add the fennel, kohlrabi, and carrots to the pot.
- 26. Sauté the vegetables for about 5 minutes over medium heat.
- 27. Drain the cooked quinoa.
- 28. Distribute the quinoa onto the plates.
- 29. Season the vegetables with salt and pepper to taste.
- 30. Place the vegetables next to the quinoa on the plates.
- 31. Drizzle the walnut-basil sauce over the dish.
- 32. Serve the dish immediately and enjoy!
