🍽️ Crispy Quinoa Patties with Homemade Hummus

Ingredients
- quinoa 300 g
- Salt pinch
- Pepper, black ground pinch
- Curry powder pinch
- Olive oil 2 tbsp
- Chickpeas 300 g
- Carrots 1 pc
- Lemons 0.5 pc
- Onions, yellow 1 pc
- Garlic cloves 2 pc
- Parsley, fresh 20 g
- Cilantro, fresh 15 g
- Sesame, white 50 g
- Cumin 0.25 tsp
- Eggs 1 pc
- Oil 2 tbsp
Instructions
- 1. Rinse the quinoa grains thoroughly in a sieve with lukewarm water.
- 2. Bring water to a boil in a pot with salt.
- 3. Add the quinoa and cook it on low heat for about 12 minutes.
- 4. Remove the pot from the heat and stir in curry and olive oil.
- 5. Let the quinoa swell for another 5 minutes.
- 6. Drain the chickpeas and rinse them well in a sieve.
- 7. Halve a lemon and squeeze the juice from one half.
- 8. Wash and peel the carrots and grate them finely.
- 9. Halve and peel the onion and dice it finely.
- 10. Peel the garlic clove and chop it finely.
- 11. Wash the herbs, dry them, and remove the coarse stems.
- 12. Chop the herbs finely.
- 13. Roast the sesame seeds in a pan without fat on medium heat for 4 to 5 minutes.
- 14. Put the chickpeas, lemon juice, one garlic clove, half of the sesame, and cumin into a tall container.
- 15. Puree the ingredients very finely.
- 16. If the mixture is too thick, add a little cold water.
- 17. Season the hummus with salt, olive oil, and the remaining sesame.
- 18. Mix the carrots, onions, quinoa, and egg in a bowl.
- 19. Season the mixture with salt and pepper.
- 20. Form patties from the mixture with a diameter of about 4 cm.
- 21. Press the patties slightly flat.
- 22. Heat 2 tablespoons of oil in a pan on medium heat.
- 23. Fry the quinoa patties on both sides for about 4 minutes until golden brown.
- 24. Serve the patties on plates with hummus.
