🍽️ Crispy Zucchini Fries with Chicken and Quinoa

Ingredients
- Zucchini 2 pcs
- Salt pinch
- Pepper, black ground pinch
- Thyme, crushed 0.5 tsp
- Chicken breast fillets 600 g
- Paprika, sweet 1 tsp
- Quinoa 300 g
- Mushrooms, white 350 g
- Cherry tomatoes 200 g
- Parsley, fresh 10 g
- Lemon 1 pc
- Oil 2 tsp
Instructions
- 1. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 2. Wash the zucchini thoroughly and cut off the hard ends.
- 3. Cut the zucchini into finger-length sticks, similar to french fries.
- 4. Place the zucchini sticks into a bowl.
- 5. Season the zucchini with salt, pepper, and dried thyme.
- 6. Place the seasoned zucchini sticks on a baking sheet lined with baking paper.
- 7. Wash the chicken meat and pat it dry with kitchen paper.
- 8. Season the chicken generously with salt, pepper, and paprika powder.
- 9. Place the chicken on the baking sheet directly next to the zucchini fries.
- 10. Put the tray in the oven and bake everything for about 30 minutes.
- 11. Place the quinoa in a sieve and rinse it thoroughly under running water.
- 12. Place the rinsed quinoa into a pot.
- 13. Pour about 600 milliliters of water over the quinoa.
- 14. Bring the water with the quinoa to a boil.
- 15. Let the quinoa simmer for about 15 minutes.
- 16. Stir the quinoa occasionally until the water has evaporated and the grain is soft.
- 17. Clean the mushrooms with a kitchen cloth if necessary.
- 18. Slice the mushrooms into thin slices.
- 19. Wash the cherry tomatoes and halve them.
- 20. Wash the parsley and pick the leaves off the stems.
- 21. Finely chop the parsley leaves.
- 22. Halve the lemon and squeeze out the juice.
- 23. Place the chopped parsley into a small bowl.
- 24. Add two tablespoons of lemon juice and two teaspoons of oil to the parsley.
- 25. Mix the ingredients for the dressing well together.
- 26. Season the dressing with salt and pepper to taste.
- 27. Take the chicken and zucchini fries out of the oven.
- 28. Slice the baked chicken into bite-sized pieces.
- 29. Fill the bowls as you like with the prepared ingredients.
- 30. Drizzle the bowls with the prepared dressing and serve them.
