🍽️ Quinoa Bowl with Broccoli

Ingredients
- Quinoa 300 g
- Salt 1 tsp
- Olive oil 1 tbsp
- Broccoli 1 pc
- Onions, red 1 pc
- Garlic cloves 1 pc
- Lemons 1 pc
- Peanuts 200 g
- Honey 2 tbsp
- Oil 4 tbsp
- Cayenne pepper pinch
Instructions
- 1. Rinse the quinoa in a sieve under lukewarm water.
- 2. Bring about 700 milliliters of salted water to a boil in a pot.
- 3. Add the quinoa to the boiling water.
- 4. Cook the quinoa over low heat with the lid on for about 12 minutes.
- 5. Remove the pot from the heat and let the quinoa swell for another 5 minutes.
- 6. Then mix the quinoa with olive oil.
- 7. Wash the broccoli thoroughly and cut off the stalk.
- 8. Divide the broccoli florets into pieces about 1 centimeter in size.
- 9. Halve the onion, peel it, and slice it into thin rings.
- 10. Peel the garlic and slice it into thin pieces.
- 11. Halve the lemon and squeeze out the juice.
- 12. Roast the peanuts in a non-stick pan over medium heat for about 2 minutes.
- 13. Remove the peanuts from the pan and place them on a plate.
- 14. Wipe the pan clean.
- 15. Heat 1 tablespoon of oil in the pan.
- 16. Sauté the onions and garlic for about 2 minutes.
- 17. Add the broccoli and fry it for about 4 minutes.
- 18. Place the peanuts, lemon juice, honey, and 3 tablespoons of oil in a tall container.
- 19. Blend the mixture into a sauce.
- 20. Season the sauce to taste with salt and cayenne pepper.
- 21. Mix the quinoa and broccoli in a bowl.
- 22. Plate the bowl.
- 23. Decorate the bowl with the peanut sauce and serve.
